About Last Week

I am skipping the Meal Plan this week. I know a lot of you look forward to that for inspiration, I’m sorry but I’ve been really sick.

About Being Sick

I didn’t get all of the experimentation in that I was planning in last weeks Meal Plan. I barely ate, I was pretty much planted on the couch most of the time, I only got up to make my boys something to eat. On Tuesday, my sickest day, I just left food on the counter and my 4 year old distributed it. They ate really well in the evening when my husband made them real food. I didn’t open my laptop for days at a time, strenuous activities like making a cup of coffee (with my Keurig) required a nap. I’m not really a nap kind of girl but I took two yesterday. This is serious people.

I haven’t left the house in a week but thankfully I’m feeling much better. I’m not 100% mostly because I don’t have a lot of energy yet. I hope to blog more this week but I’m not making any promises. After 1 week of no productivity I have a lot to do. I even attempted to take some pictures so I could share some recipes with you but sickness and photography don’t mix.

Coming Up

The Extended Family is featured every Thursday. I love seeing how other families make a plant-based lifestyle work. Honestly, I’m also encouraged by their struggles because I struggle sometimes too. I think it helps us see we are not alone in this. Many of the people involved in the Extended Family are new the eating plant-based and have no support in real life, we are their support system.

I have two recipes I really want to share soon, I’m only waiting on good pictures but I may share them with bad pictures. The first is for Gluten-Free, Vegan Lasagna and the second is for an incredible soup that will be your new go to, super easy soup.

I have a guest post coming up next week. I’ll link it once it’s up. :) YES, I feel cool.

Next week is my next Healthy Cravings. This months theme is Italian food. I’m planning for a 5 course meal with appetizers, soup, salad, 2 or 3 entrés, and coffee with dessert. If you have a favorite Italian recipe link it in the comments.

      Thanks! I’m hoping to be back at it soon. I’m craving chocolate again so I’m guessing everything is returning to normal. :)

    The nasty croup? That hit us all a few weeks back. I was so exhausted, so I feel for you!! Get better :-)

      Thanks Sarah! I’ve decided I really need to invest some time in a few freezer meals. They would have come in handy last week.
