It’s time to take another look at The Extended Family. I hope you have found at least one family you can relate to. This week we look to Becky and Kerri, both homeschool families, as they share about their struggles with a Plant-Based Diet and their favorite recipes.
1. What has been the biggest struggle with adopting a plant-based diet?
My biggest struggle is staying focused and committed in social situations such as church potlucks, coffee & finger foods with the homeschool moms and eating out with the family. I also struggle with finding the right menu-planning system to keep up with all the recipes and meal ideas I want to try – it’s a bit overwhelming!
2. Have you noticed any positive changes in you or your family since beginning a plant-based diet?
Definitely! My blood pressure and blood sugars immediately began lowering once I began eating plant-based and I’ve lost a few pounds as well.
3. What is your favorite plant-based meal?
We love “Redeemed” Potato Soup, a recipe that someone online had converted. I’ve saved a copy here on my Google Drive.

1. What has been the biggest struggle with adopting a plant-based diet?
Our biggest struggle with adopting a plant-based diet is variety. We feel as if the only recipes that appeal to us are some of the soups we have come across and one casserole. Just not enough variety for our bunch. We have tried not to use replacement vegan foods, ie, TVP to adapt a meal, but we may have to. I am constantly searching and either we are extremely picky or I am not getting good sites. My goal is to have 28 plant-based lunches and 28 plant-based dinner meals on our schedule. We currently have 5.
2. Have you noticed any positive changes in you or your family since beginning a plant-based diet?
So far we haven’t noticed any positive changes. No negative ones other than struggling to not eat soup every day. I know none of us will eat it when it hits over 100, which will be April or early May for us.
3. What is your favorite plant-based meal?
Our favorite plant-based meal without a doubt is Ridiculously Easy Lentil Soup from Fat-Free Vegan!
