I’ve been on a soup kick lately and I expect this week to be no different. I’ve been remaking my old favorites in my Instant Pot so I can share the directions for all my IPers. I also plan to start my bread baking again but every time I plan to do it, it gets hot again. Despite the warm weather here in Arizona, I’m on a fall kick and gearing up for Thanksgiving.

Weekly Plant-Based Meal Plan

This week I’ll be taking my Texas-Style Chili to a chili cook off but the rest of the week will be business as usual. I plan to have plenty of soups. I’ll also make Oatmeal in my Instant Pot to save time and sanity.

Monday

Strawberry Banana Smoothie

Sandwiches and apple slices

Minestrone Soup

Tuesday

Toast with SoyNut Butter and fresh fruit

leftover soup

Nachos or Tostadas

Wednesday

Instant Pot Oatmeal

Nachos (using leftovers)

Veggie Pasta with vegan Caesar Salad (I got Daiya’s new dressing)

Thursday

Raisin Cinnamon Oatmeal (see my Oatmeal Guide)

Bean and Grain Bowl

Texas Style Chili

Friday

Pumpkin Muffins

Leftover Pasta

Green Chili, Cilantro and Lime Soup

    I was also wondering if you have a shopping list to go along with your meal plans. That would be helpful. The meal plans look great!

    • HI Sarah, I just announced today that we will have an informal group, see the latest meal plan for details.
      I don’t offer a shopping list for these weekly meal plan because they are time consuming to make, edit and format but occasionally I offer them to my email list. I send a weekly email with plant-based tips and regularly send extras! I’ve got an Instant Pot rebook coming out this week.
