It is happening, first with mushrooms and now with tomatoes.
My whole life I have loathed the taste of tomatoes. I liked tomato products like ketchup, salsa, and marinara. I did not like raw tomatoes at all or huge chunks of cooked tomatoes. Blech!
A few weeks ago I went to favorite pizza place of ours and ordered the vegetarian pizza without cheese. It came out with LARGE AND IN CHARGE pieces of tomatoes on top. I psyched myself up and took a bite of this tomato laden pizza and enjoyed it.
That was the first time I enjoyed tomatoes. Ever! I have since made french bread pizza’s with tomatoes, Italian Bake, “taco” salad, and a host of other tomato-full foods. I’m not planning on snacking on whole tomatoes anytime soon but who knows!

It took my husband a while to warm up to brown rice too. He was always a white rice kind of guy. Now we are fully converted to brown.

I used to HATE (strong word, but very appropriate) lima beans as a kid and last year I received some dried lima beans as a party favor when I went to a farm dinner (such a fun night). I thought I’d give them another try since I knew they were probably the highest quality lima beans I would ever have the chance to try. I made a lima bean casserole from a recipe I found in Madhur Jaffrey’s World Vegetarian cookbook and I actually liked it. They weren’t the dry awful beans I remembered from my childhood!

I should try Lima beans too. I was never a fan before but I’d eat them if they ware in a soup I was eating. Is never cooked them.
As a kid I didn’t like any beans and I was probably 18 before I would eat pinto beans. Now it seems I like ever bean a eat.

Awesome! Bruschetta is something you should try when you get really into tomatoes 🙂 I used to hate brussels sprouts as a kid (I think most do)….but I LOVE them now!

I have loved Bruschetta since my early 20s! Funny huh? I’ll eat almost anything with onions and garlic!
