I’m not a salad lover. But I LOVE this Veggie Stuffed Pita with hummus.
Hummus is the deal breaker for me, it is not as fulfilling without it. I also make this as a wrap with either tortillas or lavash bread. I’ll eat it everyday for weeks then not touch it for months. I use whatever veggies I have available. In this wrap I used spinach, red bell peppers, carrots, onions, cucumbers, tomatoes and hummus.
These guys can easily be wrapped up for a lunch on the go, although I wouldn’t recommend eating them while driving. I have a hard time eating them while sitting still without making a mess. ๐ They would be perfect for a picnic or brown bag lunch, especially paired with a piece of fruit and maybe even a Party Worthy Parfait.

ANY kind of tortilla, or pita like breading with TONS of veggies like this is one of my all time favorites too!! This lunch looks SO good, thank you for this idea for my next few lunches!

I can eat sooo many more veggies when I eat it with hummus. The hummus is kind of addictive in a good way. ๐
Looks good. I’ve been on a fruitarian kick… at least for breakfasts and lunch. But, that sandwich is looking good. Yumm!
My youngest son is a fruitarian most of the time. I call him a “fruit monster” because he can really put it away.

I have two pita’s left so I’ll be having this the next two days as well! It really can’t be beat! I’ll pretend we are having lunch together talking about recipes and all things food related.
