It’s New Year’s Eve! It’s also my birthday. Happy Birthday to me!
My kids are running around excited about eating cake for dinner, so not going to happen. One insists I need a Spider Man cake, the other a Star Wars cake. My 7 year old said it should be half and half. I asked, “Do you think your mommy wants a Spider Man Star Wars cake.” He said, “yes, that is perfect, then you can think of both of your sons.” And that my friends is motherhood in a nut shell.
New Year’s Eve
Since it is New Year’s Eve and I’m no where close to prepared I wanted to share some last minute food ideas.
My ideal party food is appetizers and desserts. I like fun dips and finger foods. Take a little time in the grocery store then whip up this spread in about half an hour.
Token Hummus and Veggies
Even my non-veggie friends always have hummus and veggies at their parties. I think it is so you can pig out on everything else but still feel like it’s OK because you ate your veggies. Yes, hummus is easy to make but it is easier to buy if you are on a tight schedule.
Chips, Dip, Salsa and Guac
It isn’t a party without some combination of chips, dip, salsa and guacamole. Maybe that is just my ideal party but I was born in Texas and I’m all about the Tex-Mex flavors. Plus, you can buy chips and salsa at the store.
I recommend you make the dip and guacamole though. I recommend the White Bean Green Chili Dip. Use canned beans and you can create it in a few minutes with a Blendtec or food processor.
Other easy options include the Un-fried Black Beans or Pinto Beans. They make a great dip!
Show Stopper
In addition to the easy, mostly store-bought things mentioned above you need something with a bit more pizzazz.
Spinach Artichoke Dip
The Spinach and Artichoke dip is the easiest you’ll ever make plus it is plant-based (yes, dairy-free Spinach Artichoke dip!) I’ll to bake it for 20 minutes but that is mostly just to warm it up. You can do it for less time if needed.

Parfaits
My parfaits consist of fruit, vegan yogurt and granola. Easy peasy, right? Make is fancy by putting it together in a wine classes. I use vanilla So Delicious yogurt (not technically a yogurt) and SoyNut Butter granola so it’s both dairy-free and gluten-free.
You can make my 2 Ingredient Fruit dip for an other spin on it. Or layer it with the vanilla!
Avocado Chocolate Mousse
This decadent treat will amaze everyone. Avocado Chocolate Mousse comes together quickly if you have ripe avocados. If not you are doomed, don’t even try it. We like it with fresh fruit but you could also use graham crackers or cookies to dip.
Tacos
If you feel like you need something that is a little more hearty go with Tacos! Who doesn’t love tacos? Weirdo’s, that’s who! (Sorry, Junie B. Jones flashback!)
These Lentil Tacos will put you closer to the edge of the 30 minute time limit I mentioned but you can use my party trick to make it easier.
Taco Party Trick: After you make the Lentils for the tacos, stand all of your taco shells up in a pan so that they are forced to stand up/open (like a litter U). Then you can fill them easily. Once filled, place them in the oven on low until time to eat. Then take them out of the oven and sprinkle the toppings on top. Everyone can help themselves to fully decked out tacos.
There you have it! A quick and easy party spread that is perfect for New Year’s Eve, a birthday party or even a fun game night with friends. The best part is that nothing requires cooking except the tacos and you can skip those.
