What a week! Two giveaways ended and the winners have been contacted, my boys have been sick and I was in a car accident. (I’m ok.) I’m not quite up to cooking but my friend Melodee brought us a couple of plant-based meals.
This week’s meal plan will be pretty sparse because I don’t plan on doing much cooking. Thankfully it isn’t slowing my pinning down. My 40+ Meatless Recipes for Lent post is doing well on Pinterest this week.
Weekly Meal Plan
Breakfast
This week cereal and toast is the best we can do. I’m really craving a Breakfast Stir Fry and pancakes, hopefully I’ll be up for cooking by the end of the week.
Lunch
My husband has been keeping me in a steady supply of Veggie Burritos. My boys lunches have been either sandwiches, baked potatoes or leftovers. I’ve got plenty of leftover beans and potatoes.
Dinner
This week I hope to use my Crock Pot and Instant Pot (it’s a great price on Amazon right now) for easy meals. My last newsletter included some Crock Pot tips! Sign up now so you don’t miss the next newsletter! Each newsletter contains tips to make plant-based living easier.
- Easy Mexican Casserole (Crock Pot)
- Cheesy Broccoli and Rice Casserole (Crock Pot)
- Lentil Tacos (Instant Pot)
- Baked Potatoes (in either Crock Pot or Instant Pot depending on time)
