What do you eat? I get emails from people asking what to eat on a plant-based diet, let me tell you, there is a lot of variety. Maybe nuance is the better word.
Typically people who eat a whole food plant-based diet avoid meat and dairy but that just tells me what they aren’t eating, not what they are eating.
It is easier to say what we don’t eat.
There are people who high carbs, low carbs, no carbs. Others who are grain-free, or legume-free or nightshade-free. There are also food allergies, intolerances and other restrictions. The list goes on.
What to eat or not eat is a personal choice. I rarely offer opinions unless I’m specifically asked and even then I’ll usually evade the question. I don’t even try to talk people into going plant-based but once they decide for themselves I’m there to coach them along.
I say all of that to ask, what do you eat?
I regularly post meal plans so you can see what I eat, or at least what I plan to eat but what do you eat? Inquiring minds want to know!
Plant-Based Diet Meal Plan
Breakfast
- Bagels with peanut butter (or alternative) and fruit.
- Cashew Chai Latte Oatmeal
- Smoothie
- Cereal
- Apple Oatmeal in the Instant Pot
Lunch
- Leftover pasta and salad with Oil-Free Raspberry Vinaigrette
- Veggie Burrito
- Bean and Grain Bowl
- Jalapeno Hummus and Veggies
- PB&J with fruit
Dinner
- Chickpea Noodle Soup
- Lentil Tacos (stove top or Instant Pot) and Mexican Rice
- Broccoli Potato Soup
- Veggie Burgers and baked Sweet Potatoes
My husband and I have both been working longer hours so we are going to try to take turns cooking, or at least switch off cooking and cleaning. I really dislike doing the dishes by the way.

My husband and I eat lots of organic fruits and vegetables, beans and lentils, quinoa, millet, couscous, gluten free breads and bagels. We are trying to make the percentage of each meal higher in raw foods. Removing gluten due to some tummy upsets has been challenging but fun. There are more and more recipes, flours and ideas around now.

Gina, surprisingly I’m pretty picky about my veggies. I enjoy them more in soup than by themselves. It with a really good dip. My favorite way to eat veggies is salsa. Lol

I plan to eat plant-based meals after getting the operation with my doctor here in Wilmington, CA, about my hernia condition. I’m happy when you mention that while greens don’t provide much fat or protein, they are the light, healthy, fiber companion that every plant-based meal needs. It’s also elementary to incorporate them into your diet.
There is a way to include green in whatever you eat. I’m not worried about indigestion after the operation since green food is just light to process.
