Spring is finally here! While the temps have been lovely in Arizona for a few month’s it’s nice to know it is official. I even planted some veggies in my garden after taking a year off. I can’t wait to start working fresh tomatoes into my plant-based meal plan.
I’ve got plans to plant more soon.
As I mentioned last week, my focus is on eating healthy food, not necessarily quick and easy food. I think you’ll agree that this week’s meal plan still has plenty of quick and easy meals.
I’ve gotten away from processed foods with the exception of occasional pasta (and not so occasional tortilla chips).
Breakfast
- Smoothie Bowl
- Bean and Potato Burrito’s
- Triple Berry Porridge
- Bagels with peanut butter (or SoyNut Butter) and fruit
Lunch
- Spring Fruit and Veggie Salad pictured above with spinach, broccoli, strawberries, pineapple, cucumbers and oranges.
- Taco Salad
- Baked Potatoes

Dinner
- Tostadas with Mexican Rice
- Chickpea Noodle Soup
- Cheesy Crock Pot Broccoli and Rice Casserole
- Taco Salad
- Chickpea Quinoa Stir Fry

Family Fun Day
Last Thursday I took the day off from all my work and we had a family fun day. See a picture of our hike. I didn’t look at my blog or social media until Friday. I didn’t realize my site was down. If you came by and couldn’t access My Plant-Based Family I’m very sorry.
