Eating healthy after a holiday is difficult. If you were surrounded by unhealthy foods and indulged, it can be really hard to get back on track-
But that is exactly what you have to do.
I believe having a meal plan makes it a lot easier to maintain and get back in a healthy eating routine.

Plant-Based Meal Plan
Your meal plan should reflect your schedule, budget and any food restrictions. I’ll be relying on a few quick and easy things for our busy nights and save the recipes that take more prep and longer cooking times, for the nights I have more time.
Breakfast
- Steel Cut Oats with strawberries and chia seeds
- Toast with nut or seed butter and fruit.
- Bean and Potato Burritos
- Breakfast Quinoa
- Berry Breakfast Quinoa
Lunch
- Baked potato and steamed veggies (both cooked in the Instant Pot) with my Creamy Brown Gravy.
- Big Salad with tomatoes, onions, cucumbers, peppers and whatever else I have available.
- Leftover soup and salad
- Veggie Sandwich
Dinner
- Unfried Black Beans and Cilantro Lime Quinoa burritos or salads
- Chickpea Noodle Soup
- Baked Potatoes and Broccoli with my Creamy Brown Gravy.
- Tostadas
I hope to have leftovers several times so I’ll double recipes when I make them so I can skip a day of cooking.
Weekend Update
This weekend I also spent some time baking!
I’ve been intimidated to try bread baking but I finally gave it a try. We are hooked. Morning toast and lunch time sandwiches will be so much better with homemade bread. See photos on Instagram.
I can’t really take all the credit. I’m using The New Artisan Bread in 5 Minutes a Day book. There is a gluten-free version as well.
I also made my regular recipe for The World’s Best Banana Bread! This time I experimented with cutting the sugar in half. If was still good but not as good. It’s almost gone so there were no complaints. You will need more liquid if you cut the sugar.
I’ve made this recipe gluten-free by using Jewel’s All-Purpose Flour Mix! It’s a winner! Cinnamon Swirl Banana Bread that is gluten-free and plant-based. I’ll try to share the recipe soon.
I know, all of this baking doesn’t sound like me but our oldest son was in town visiting us. He is in the Navy so we don’t see him often. He has just been stationed in Norfolk and we couldn’t be prouder! He loved the banana bread.
We also took advantage of the gorgeous weather. We attended a family fun day at the park that was hosted by my son’s preschool.
We played outside a lot! You have to do it now because it get’s too hot in the summer here in Arizona. We even did a little snacking outside. We had fruit as usual but also Dream non-dairy yogurt and they were delicious! Both the Coconut Dream flavors and the Almond Dream flavors were wonderful. You can tell how much he loved them too! Almond Dream is available at my local Sprouts Market.
