Summer…I love summer but it does not put me in a cooking mood. When it’s hot I look for easy, no cook meals whenever possible. I’ve created a summer meal plan with hearty salads, easy pasta and a delicious stir fry.
When possible I’ll do a little batch cooking. If you aren’t familiar with batch cooking it is when you cook a large amount of something and use it multiple times. For example, I could cook a big batch of chickpeas and use them all week long in tacos, stir frys, hummus, etc.
This week I’m going to share a meal plan that uses simple recipes so you won’t have to cook every day.
It has some of my favorite recipes including one I’ve never shared here.

Well the picture is a clue…I’m pulling a lot of delicious tomatoes out of my garden and this meal plan uses them well! This meal plan uses basic ingredients you normally see in my recipes plus a few fun summer additions like pineapple and mango!
Save Time With Batch Cooking
I also use batch cooking to cook black beans and rice that will free up cooking on other nights. Every recipe leaves room for variation. One recipe can be made into a bowl, a burrito or salad by only changing an ingredient or two.
