Were you wondering where this week’s meal plan was? Well… it’s here; just a day late. We finally had a weekend away. We took a trip to northern Arizona; I found a little spot with cabins, hiking and lower temperatures.
I almost skipped the meal plan all together but I have another important reason for sharing. Today is Prime Day! If you are an Amazon Prime member you can get some amazing deals today. I could easily use my Instant Pot every day.
Meal Plan
I’m skipping Monday since it’s already passed. This week’s meal plan is fairly simple. After a long weekend vacation it’s hard to get back in the swing of things. This meal plan uses simple recipes that are big on flavor.
Tuesday
Bagels with fruit
Lentil-Quinoa Salad (you can use rice instead of quinoa)
Grilled Veggies and Baked Potatoes
Wednesday
Smoothies and Strawberry Banana Muffins
Easy Sandwiches and veggies
Thursday
Baked Sweet Potato (actually made in the Instant Pot)
leftovers for lunch
Cheesy Broccoli and Rice in the Crock Pot
Friday
Big Salad
BBQ Cauliflower Bites with Pasta Salad and veggies

This recipe looks awesome! I’m going to try it — except I can’t find a peanut-free liquid smoke in my store. Awaiting response from Wright’s (24hrs+). About the Instant Pot, I had the 6 q on order but cancelled it — being uncertain that it would be big enough for a family of 5 (3 teen boys)? What do you think? Unfortunately, that great deal is gone now! 🙁

I think the 6 qt will work for you! You may not have a lot of leftovers but I doubt you do anyway. 🙂
I share every time I see the deep discounts but even at regular price it is worth it. I’m so glad I bought it when I did (almost 2 years ago). Black Friday sales get as low as $75 some times.
One thing to consider is unless you are making one pot meals 6 qts is a lot of food. It doesn’t go as far with soups but with rice, beans, potatoes, lentils, etc. it’s a lot.
