When I don’t have a lot of time to think about my meal plan I try to focus on the basics. For me, that means potatoes, beans, rice, veggies and fruit. After a great, on-the-go weekend I want easy meals that are filling and hearty.
This meal plan will focus on dinner because I plan to eat oatmeal every day this week! Why, because oatmeal is easy, filling and hearty. I know, I keep things simple.
I’ll switch between my Instant Pot Oatmeal, my favorite Oatmeal Cups and these super easy overnight oats!
I’ll eat leftovers for lunch every chance I get and when I’m out I’ll make a Baked Potato in my Instant Pot.
Plant-Based Dinner Meal Plan
Monday: Instant Pot Rice and Black Beans
This easy dish is a nice departure from the Mexican Casserole I usually make with a tomato flavor. This recipe uses lime for a lighter twist.
Tuesday: Chickpea Noodle Soup
This is one of my favorite soups and it’s also the easiest! In the next year or two I expect my son to be able to make this, yes, it is that easy. Even better, you can pre-chop the veggies for a faster meal.
Wednesday: Potato and Broccoli with Brown Gravy
I usually cook my potatoes in the Instant Pot because it’s so easy but if you have a lot of time you can cook them in the Crock Pot instead! Use your favorite method to cook the broccoli, I usually steam it. The Brown Gravy will come together quickly on the stove.
Thursday: New Veggie Lentil Soup
I don’t have this recipe published yet but this is quickly becoming my favorite soup. I use my favorite veggies and lentils for a hearty soup that I couldn’t get enough of. Oh, and I cooked it in the Instant Pot. You can see a preview in the photo in the top right of the collage above.
Friday: Enchilada Casserole
My husband will normally cook this one for me. It’s really easy to put together and we love it! If I’m short on time I’ll skip the cheese sauce but we love it either way.

OMG that brown gravy! I subscribe to a plant based diet weekly meal plan but I always check your plan before hitting the grocery store. I need that simple broccoli + baked potato + gravy in my life, like now! And I’m always excited about all your instant pot recipes. Looking forward to trying the lentil soup soon!

This gravy is so easy! I wanted it today but I was out of potatoes. I need more before I can make this and the new lentil soup! Both are big winners in my book!
