Kathy Hester has knocked it out of the park with her new book The Ultimate Vegan Cookbook for Your Instant Pot! It has quickly moved to the top of the list of cookbooks I recommend.
Kathy understands that sometimes you need really simple recipes, other times you are missing an ingredient and need to make a substitution, and other days you want to try something new and fancy. This cookbook does it all!

I’ve enjoyed all of the recipes I’ve made so far from The Ultimate Vegan Cookbook for Your Instant Pot!
I’ve taken photos of a few of them and I’m excited to share the Winter One-Pot Lentils and Rice recipe. Unless you are new here, know how much I love lentils! First, I’ll tell you about a few other recipes I made from this book.

Check out this oatmeal cooked in the Instant Pot! Kathy used rolled oats and it turned out perfect!
My very favorite thing in the whole world right now is Kathy’s Vegan Cauliflower Queso. I can’t share those recipes but they are worth the price of the book alone! Truly, after tasting the queso you would gladly buy the book. It’s really that good!

Before I get ahead of myself let me tell you a little more about the book. It has 80 recipes and they are all completely vegan! I know that can be a relief when you are looking for Instant Pot recipes.
Plus, it was written for the Instant Pot so you don’t have to figure out how to make it in your pressure cooker if you are using the Instant Pot too.
Some recipes call for oil OR a dry saute with water or broth to prevent sticking. Often, recipes will let you know when substitutions are permitted. I love making substitutions so I appreciated the guidance, I avoided a trip to the store and had confidence my recipe would work.

Instant Pot Winter One-Pot Lentils and Rice
This recipe says it serves four but we stretched it a bit further.
Ingredients
- 1 tablespoon water or vegetable broth
- ½ cup chopped onion
- 2 cloves garlic, minced
- 3½ cups water
- 1½ cups brown rice
- 1 cup brown lentils
- 1 cup peeled and diced rutabaga (or turnip or potato)
- 2 inches sprig fresh rosemary
- 1 tablespoon dried marjoram (or thyme)
- salt and pepper to taste
Instructions
- For the sauté, use the sauté setting over normal, or medium heat, and heat the water or broth. Add the onion and sauté until transparent, 5 minutes. Then add the garlic and sauté a minute more.
- For the pressure cooker, add the water, brown rice, lentils, rutabaga, rosemary and marjoram to the onion mixture and stir to combine. Put the lid on and make sure that the vent is sealed. Cook on manual setting at high pressure and set for 23 minutes.
- Let the pressure release naturally. Season with salt and pepper before serving and add more marjoram and ground rosemary as needed.

I haven’t had my Instant Pot that long, but I am really enjoying it so far. It is great for the basics like rice, beans, and greens!
Wow I just got my instant pot at Christmas and I’m in love with it ! I have major food sensitives and haven’t had refined sugar at all for about 16 yrs and eat nothing with additives or MSG of any kind or I only hurt myself as I end up sick . This book looks amazing. But I would like to know if it includes the nutrition info on the recipes.

I looove making everything in my Instant Pot haha! My two faves are rice (always comes out perfect) and mashed potatoes (so hands off).
II have had my IP for about 2 years and love it, but I’m fairly new to plant-based eating so this book would be perfect.
I bought an IP last summer and still haven’t gotten up the nerve to use it yet. I’ve been looking for a simple vegan cookbook to use for it. This cookbook might give me the impetus to finally use it!
I really like making rice and beans in it.
I love how quickly I can make rice and beans in my instant pot. But I also love making steel cut oats for a good morning treat.

I’ve had my IP for over a year, but I finally tried it out this weekend and made vegan cheese sauce. I want to learn how to make more recipes in it!
I made this with red lentils and they were non-existent after 23 minutes on manual/high. I will try again but maybe do them after the rice is done. Lentils usually only take like 4 minutes in the IP. It was a good dish! 😀
I used french lentils and everything turned to mush – not soup.
The recipe calls for brown lentils. Not all lentils have the same cooking time.

Yep, brown lentils are required for this recipe. Any other type of lentils will turn to mush in a matter of minutes.
I made this tonight and thought it was really hearty and delicious! I don’t eat meat, but I’m not vegan so I added a pat of butter on top and it was lovely. It was also one of the rare times that a recipe turned out looking just like it did in the photo.
Anxious to try the recipe! Do I use dried lentils, and do I soak them overnight first? I’ve also had great success with risotto in the instant pot – amazing!

Lentils are very quick cooking and do not require soaking. Even when cooking them on the stove, they can be ready with a 20 minute or so simmer.

Flavor wise this recipe was great. But for me the texture was an issue. The lentils were a good texture but the brown rice was mush. That’s obviously just my opinion.
I will try this recipe again though and cook it a shorter time. I think ill try 15 minutes, rest 5 and do a quick release.
And this lesson is why I read reviews before I make a recipe.
