Prime Day and our Weekly Meal Plan

July 12, 2016 by Holly Yzquierdo 4 Comments

Plant-Based Meal Plan

Were you wondering where this week’s meal plan was? Well… it’s here; just a day late. We finally had a weekend away. We took a trip to northern Arizona; I found a little spot with cabins, hiking and lower temperatures.

I almost skipped the meal plan all together but I have another important reason for sharing. Today is Prime Day! If you are an Amazon Prime member you can get some amazing deals today. One of those deals is the Instant Pot! Don’t miss it! I heard from someone at Instant Pot headquarters that this is the best price ever!

I could easily use my Instant Pot every day.

I’m skipping Monday since it’s already passed. This week’s meal plan is fairly simple. After a long weekend vacation it’s hard to get back in the swing of things. This meal plan uses simple recipes that are big on flavor.  [Read more…] about Prime Day and our Weekly Meal Plan

Weekly Plant-Based Meal Plan

June 27, 2016 by Holly Yzquierdo Leave a Comment

Plant-Based meal plan with quick and easy meal ideas

Our weekly plant-based meal plan looks a little different lately. I have more free time in the morning than in the evening and I’ve compensated by cooking a little more in the morning and a little less at night. Our dinners are either quick and easy or made in the Crock Pot or Instant Pot.

My kids aren’t complaining, I’m “the best mom in the whole wide world” anytime I make pancakes. This week we will rely on leftovers a little more in our meal plan.

I also think that simple meals taste just as good, and sometimes better, than more complicated meals. For the rest of the summer I’m hoping to try to simplify my meals even more. That will mean more leftovers, less cooking, and still eating well.

Some things I could eat every day, like baked potatoes, beans and rice, pasta with marinara. I’ve been enjoying more smoothies lately because it’s so hot and I love using frozen strawberries in my smoothie. It seems like I’m eating sorbet for breakfast.

Every summer I avoid using the oven (really it’s from May through September) except in the early morning so it doesn’t heat up the house. I haven’t perfected my granola bar recipe yet because it requires baking. I may have to attempt a no-cook version for summer.

Plant-Based Meal Plan for Spring

Spring is finally here! While the temps have been lovely in Arizona for a few month’s it’s nice to know it is official. I even planted some veggies in my garden after taking a year off. I can’t wait to start working fresh tomatoes into my plant-based meal plan.

I’ve got plans to plant more soon.

Spring Break Week

March 14, 2016 by Holly Yzquierdo Leave a Comment

Plant-Based Meal Plan Monday

It’s spring break this week which means my kids are going to be eating at home more than usual.

If you follow me on Instagram you saw our Costco haul. We did our regular grocery shopping too. This week we have fresh pineapple, cantaloupe, honeydew melon and strawberries to be excited about.

I bought store-bought hummus as a time saver.  I’m hoping this will make snacks easier. I’ll cut up some raw veggies for easy snacks.

Most of the time I’m focused on how to save time and cook less but I’m trying to rethink things. I want to spend more time cooking. Why? Because when I’m focused on eating healthy it usually requires that I spend a little more time in the kitchen.

My husband is on board and is taking on some of the cooking. He already made a huge batch of Minestrone Soup we will enjoy this week.

Don’t get me wrong. I’m not going to spend hours in the kitchen every day. I work full-time and do freelance in the nights and weekends. I’ll still use my Instant Pot for quick meals but my focus will be on nutritious food, not quick food.

Weekly Meal Plan 02/15/16

February 15, 2016 by Holly Yzquierdo 1 Comment

Weekly Meal Plan

What a week! Two giveaways ended and the winners have been contacted, my boys have been sick and I was in a car accident. (I’m ok.) I’m not quite up to cooking but my friend Melodee brought us a couple of plant-based meals.

This week’s meal plan will be pretty sparse because I don’t plan on doing much cooking. Thankfully it isn’t slowing my pinning down. My 40+ Meatless Recipes for Lent post is doing well on Pinterest this week.

Valentine’s Week Plant-Based Meal Plan

February 8, 2016 by Holly Yzquierdo Leave a Comment

Plant-based meal plan

Our Plant-Based Meal Plan this week will have a slight nod to Valentine’s Day. I’ll also have a new recipe (more like an allergy-friendly treat hack) later this week.

The great thing about living a plant-based lifestyle is that it’s already heart healthy. If that is not Valentine’s worthy I don’t know what is.
