Oatmeal Cups

These vegan Oatmeal Cups are beautiful and delicious. I started making these in early 2020. We were addicted and made a batch every week until it became too hot to bake here in Arizona.

Vegan Oatmeal Cups

I’ve made a lot of baked oatmeal recipes but these always seemed more festive. The combination of the dried fruit and the nuts and seeds always made them feel like a Christmas snack. I decided to wait all year to share them and now it’s time.

Most of the time I made them in my Pampered Chef brownie pan. You may have seen some Instagram stories of them. They taste just as good whether they are square or round.

Vegan Oatmeal Cups

I love that these are oil-free but taste decadent thanks to the seeds, nuts, and dried fruit. Those all help them to be really filling too! We eat them for breakfast, snack and dessert!

Another bonus to this recipe is it makes 18 oatmeal cups. Trust me, a dozen is never enough for our crew. We are also able to package some up and give them to others.

Fruit and Nut Oatmeal Cups

Vegan Oatmeal Cups

These plant-based Fruit and Nut Oatmeal Cups are not only delicious, they are also beautiful.

Prep Time 15 minutes
Cook Time 20 minutes
Additional Time 5 minutes
Total Time 40 minutes

Ingredients

  • 2 Tablespoons ground flax seed
  • 6 Tablespoons water
  • 3/4 cup applesauce
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/3 cup maple syrup
  • 1 teaspoon pumpkin spice seasoning
  • 1 teaspoon baking soda
  • 1 cup dried fruit (I use a cranberry, golden raisin and cherry mix)
  • 1/4 cup dried fruit (for topping)
  • 2 Tablespoon raw pepitas (divided)
  • 2 Tablespoon hemp seeds (divided)
  • 1/4 cup chopped walnuts
  • 2 1/2 cups rolled oats
  • 1 1/2 cup plant-based milk (we use rice milk)

Instructions

  1. Make flax eggs by combining ground flax seed and water in a small bowl. Stir well then set aside.
  2. Preheat over to 350 degrees.
  3. In a big bowl, add applesauce, vanilla, salt, maple syrup, pumpkin spice seasoning together and stir well.
  4. Next, add baking soda, 1 cup of the dried fruit, have the hemp seeds and half the raw pepitas, and all the walnuts. Stir well.
  5. Add the oats, flax seed mixture, plant-based milk and stir well. I like to let this sit for 5-10 minutes so the oats absorb the liquid.
  6. Scoop the mixture into a muffin pan. My muffin pan is nonstick. I use a 1/4 cup measuring cup. The muffin cups will rise slightly. If things tend to stick in your pan, use a little cooking spray.
  7. Sprinkle the remaining dried fruit and seeds on top of the muffin cup. (If you forgot and added it all inside that is ok too. You can add a little more on top if you want).
  8. Bake for 20-25 minutes. The oatmeal cups will be golden brown.

Notes

Store muffin cups in the refrigerator in an air tight container for about a week.

Substitutions

This versatile recipe works with a lot of substitutions.

  • If you don’t have applesauce you can used mashed bananas. See more tips here.
  • Can’t have nuts, you can skip them all together.
  • Can’t have seeds? The flax seeds work as a binder so you could try an egg replacer. I think it would work fine if you skipped it.
  • Can’t have oats? We are working on some variations using other grains because my husband can’t have oats.
  • Don’t have this dried fruit mix? You can use other dried fruit like raisins or dried cherries. I haven’t tried dried tropical fruit yet.
  • No maple syrup? You can use another sweetener like date paste or agave. You could also use sugar.
  • Want to use less sweetener? Go for it. The applesauce and dried fruit provide some sweetener already.

Sugar Free Oatmeal

Breakfast sets the tone of the day. If I start the day with a healthy breakfast, I’m more likely to continue to make good choices the rest of the day.

Sometimes we have good intentions but get off track. Oatmeal is a healthy filling breakfast but if we add lots of unhealthy ingredients we can sabotage ourselves. Instead start the day with this delicious recipe for Sugar-Free Oatmeal!

Sugar Free Oatmeal

Sugar-Free Apple and Raw Pepita Oatmeal

Ingredients

  • 1/2 cup rolled oats + 1 cup water (per person)
  • 1 packet Pure Via
  • 1 apple, diced
  • 1 Tbsp Raw Pepitas

Do

  1. Bring a pot of water to boil. Once it is at a rapid boil pour in oats.
  2. Add about half of the apples.
  3. Stir regularly adding more liquid (even plant-milk) if needed.
  4. Cook for 10-20 minutes until the oatmeal reaches the desired consistency.
  5. Remove from heat and pour in 1 packet of Pure Via.

Serve

Serve this oatmeal warm with fresh apples and raw pepitas.

Pure Via is a great tasting natural alternative to sugar. It is made from the stevia plant, has zero calories and can be added to food or drinks to sweeten them. My husband has used Pure Via in his coffee everyday for years.

I was excited to find them at my local Walmart. Right now you can save 55¢ on one box of 40 count packets while supplies last. The packets are very convenient and easy to keep in your desk or bag while away from home. You can also take advantage of a free song and cookbook/songbook download from Jewel.

Sugar-Free Instant Oatmeal

I often hear that people don’t have time to cook oatmeal and I have a solution for you. Make your own instant oatmeal by buying quick oats or making your own with a food processor or blender. Once you’ve whizzed them through the blender you have instant oatmeal. Follow the recipe below for your very own sugar-free instant oatmeal packet.

Instant Oatmeal

  • 1/3 to 1/2 cup instant oats
  • 1 packet Pure Via
  • 2-3 Tbsp raisins
  • 1 tsp Raw Pepitas, ground flax seeds or chia seeds
  • 3/4 cup-1 cup water

Pour the instant oatmeal into a mug and add hot water. If you don’t have access to hot water add the water and microwave until ready. Keep an eye on it so it doesn’t overflow while heating.

Instant Oatmeal

Top your oatmeal with fresh fruit like apples, bananas or blueberries.

Just in case you are snowed in, this week’s Meal Plan will focus on comforting meals that use basic ingredients that I usually have on hand. Here is an old list of basic supplies but I warn you it is in desperate need up an update, which I’ll try to do soon. If you bought my ebook The Plant-Based Diet Starter Guide then you already have an updated copy in the book.

Plant-Based “Snowed In” Meal Plan

Breakfast

  • Apple Cinnamon Raisin Breakfast Rice
  • Blueberry Oatmeal (sub any fruit)
  • Nutty Apple Cinnamon Oatmeal
  • Raisin Cinnamon Oatmeal
  • Breakfast Burritos with potatoes and beans

Lunch

  • Sandwiches (peanut butter, sunbutter, veggie, etc)
  • Taco Soup with Baked Potato
  • Bean Burritos make with Unfried Black Beans and grains or veggies
  • Leftover Chili with Bake Potatoes
  • Veggie Soup

Dinner

  • Texas Style Chili
  • Lentil and Barley Soup (use rice to make it Gluten-Free) and Gluten-Free Corn Bread
  • Freezer Veggie Stir Fry I use random veggies I find in my freezer but I usually have a good variety.
  • Cheesy Brown Rice and Broccoli Casserole (Crock Pot)
  • Mexican Rice and Bean Casserole (Crock Pot)

These recipes do not use a lot of fresh fruit or veggies but if you have them I recommend you add them. I wanted this Meal Plan to be pretty basic and rely on beans and grains. Add any extra veggie you have. If you are snowed in, I hope you have plenty of food stored.

I’m in the process of cleaning out my freezer and it is amazing some of the stuff I find in there. If your freezer is full try planning a meal or two based on food you have in your freezer. I have several soups stored in 2 serving containers including Green Chili, Cilantro and Rice Soup, Chili, and Enchilada Soup.

Chocolate Cherry Oatmeal

I’m back! I apologize to those of you who experienced some problem assessing this site over the last few days. I transferred to a self-hosted site and there have been a few issues. I’m very excited about all of the things I have planned, including more Back to School recipes. (just a few more kinks to work out)

I admit, Chocolate Cherry Oatmeal throws me for a loop. Breakfast isn’t supposed to be full of chocolate-y goodness, right? I prefer this for dessert buy you can eat it for breakfast and I wont say a word!

Chocolate Cherry Oatmeal

Chocolate Cherry Oatmeal (single serving)

Ingredients

  • 1/2 cup rolled oats
  • 3/4 cup water
  • 1/4 cup frozen pitted cherries
  • 1 Tbsp. vegan chocolate chips
  • 1/2 Tbsp. maple syrup (optional)
  • 1 tsp chia or hemp seeds (optional)

Do

  1. Mix oats and water together and cook according to package directions.
  2. Roughly chop frozen cherries and mix into cooked oatmeal along with chocolate chips.
  3. If preferred, add maple syrup and chia or hemp seeds.

Serve

This decadent oatmeal is pretty intense. Chocolate lovers will swoon but if you aren’t ready for that much chocolate in the morning feel free to cut back or leave it out.

Blueberry Oatmeal

Fresh Blueberries are popping up in my Meal Plans. We eat them for snacks, mixed in our breakfasts and I’m even creating a Blueberry Vinaigrette that my kids adore. My absolute favorite way to eat blueberries is in this oatmeal. Make sure you buy Certified Gluten-Free Oats of gluten is an issue for you.

Blueberry Oatmeal

Ingredients

  • Rolled Oats and Water
  • 1/4 to 1/3 cup of blueberries per person
  • Cinnamon
  • 1/4 tsp Vanilla per person
  • 1/4 tsp chia seeds
  • 1/4 tsp hemp seeds
  • a few Tbsp almonds or walnuts (optional)

Do

  1. Cook oatmeal according to package directions.
  2. Allow oatmeal to cool for a few minutes then stir in blueberries, a generous shake of cinnamon, vanilla and seeds.

Serve

This is perfect for breakfast or brunch but taste so good I’ve considered it for dessert. 🙂 I don’t measure anything out when I make it so feel free to increase or decrease ingredients to suit your taste. If you are missing an ingredient don’t fret, just skip it or substitute something else. Missing blueberries try raspberries or strawberries; no seeds, just toss in a few nuts for crunch.

Peachy Keen Oatmeal

Last week we had a little vote on My Plant-Based Family’s Facebook page. This recipe was the runner-up but I know many of you have been patiently waiting for it.

On a side note, my husband and I just celebrated our 8th wedding anniversary. Happy Anniversary!

Peachy Keen Oatmeal

Are you in a breakfast rut? Allow me to help you out with this delicious breakfast treat.

I was able to get a few dozen white peaches from the discounted produce section and I’ve been enjoying them ever since. You could use yellow peaches instead of white if you’d like.

Peachy Keen Oatmeal

Ingredients

  • Gluten-free or regular rolled oats (read the package to make the appropriate amount for your family)
  • 1 to 2 peaches per person ( just made a large batch of about 10)
  • maple syrup (optional)
  • cinnamon (optional)
  • walnuts or chia seeds (optional)

Do

  1. Peel and slice peaches; cook them on the stove (using medium heat) in a small sauce pan with peaches barely covered in water.
  2. Once peaches are soft whiz half of them in a blender or food processor. Set the rest of the cooked, sliced peaches aside.
  3. Cook oats according to package directions, you can use the leftover peach “water” if you’d like.
  4. After oatmeal is made spoon into bowls, adding puréed peaches and some peach chunks.
  5. Top with optional maple syrup, cinnamon, or walnuts.

Serve

The peaches can turn plain oatmeal into an incredible treat. I’ve also served peaches prepared this way on top of pancakes; it reminded me of homemade peach cobbler. I plan to try it with quinoa next.
