Back-to-school season means busy mornings, but sometimes the evenings are even harder. Between homework, activities and everything else that needs to happen before bedtime, getting dinner on the table can feel like one more thing on an already long list.
On nights like these, I don’t want a complicated recipe or a sink full of dishes. I want an easy plant-based dinner my family will enjoy that uses familiar ingredients and doesn’t require me to spend the whole evening in the kitchen.
