September’s Healthy Cravings Meal Plan

On Monday’s I typically post my meal plan for the week but I’m not going to do that this week. I have no idea what we are eating this week other that leftovers that are in my fridge. I’m not worried though we wont starve. If you feel lost without my Meal Plan you can read previous meal plans to help you get through the week. 🙂

You may remember this summer I hosted my first Food Demo. It was a success but has now morphed into a new group called Healthy Cravings. Our first meeting is this Thursday so I thought it would be fun to share the menu ahead of time. In these meetings I hope to introduce a plant-based diet and encourage ladies toward healthier living even if they are not yet ready to take the plant-based plunge.

For this first meeting the focus will be to Eat More Veggies! Each month I’ll have a different focus and a seasonally appropriate menu. October will be soups and chili, and November will be Thanksgiving. It is still really hot (I know I mention that every day) so I don’t want to heat the house up before everyone comes over.

Healthy Cravings Menu

Salads

  • Taco Salad with Cilantro Lime Dressing
  • Kale Salad with Maple-Mustard Dressing
  • Garden Salad with a variety of dressings
  • Creamy Basil Pasta Salad

Comfort Corner

  • Brown Rice and Broccoli Casserole
  • “Cheesy” Broccoli Baked Potato Bake
  • Lentil Ragu and Pasta

Desserts

  • Granola Bars
  • Fruit and Granola Parfait
  • I’m still deciding on some other desserts

So what do you think? I’m so excited! I’m also very thankful that my friend Steffi is bringing the Creamy Basil Pasta Salad and the Lentil Ragu. Isn’t that awesome! I have 18 people RSVP’d so far and a grocery list a mile long.

Gluten-Free Chocolate Chunk Peppermint (Black Bean) Brownies

Last weekend I held my first Food Demo. I had 22 ladies and two cute little babies come to taste a while host of plant-based dishes. I had a great time and I think they did too! I’ve even been invited to do similar Demo’s at a couple of the ladies homes.

There was so much to do I didn’t get much of a chance to share the “why” of adopting a plant-based diet, I focused more on the “you can eat real, delicious food” on a plant-based diet.

Dinner was Mexican food; it’s something that we really like and seems “normal” to people who don’t normally eat Plant-based. I had wanted to prepare a lot of different kinds of foods but as more ladies RSVP’d I knew I wouldn’t be able to prepare/store/serve that many dishes in quantities large enough for everyone to enjoy. I had a few more ladies RSVP that were not able to come. We enjoyed:

  • Quinoa Taco “Meat”
  • Unfried Beans
  • Mexican Rice (recipe near end of that post)

We also had lettuce, tomatoes, salsa, guacamole, and faux cheese sauce served with a choice of organic chips, corn or flour tortillas.  I demonstrated the faux cheese sauce for the group. One of my friends has been dairy-free for years, she LOVED it! There was also the obligatory veggie tray and hummus trio.

I also had a wide selection of desserts:

  • Watermelon Cakes
  • Gluten-Free Chocolate Chunk Peppermint Brownies (recipe below)
  • Chocolate Chip Banana Bread
  • Gluten-Free Banana Mini-Muffins
  • Gluten-Free Chocolate Chip Banana Mini-Muffins
  • Chocolate Mousse
  • Chocolate Chia Pudding
  • Strawberry Short Cakes
  • Strawberry Short Cake Cupcakes

I had two ladies coming who are mostly gluten-free so I wanted to have at least one more gluten-free dessert. I came up with these brownies.

Gluten-Free Chocolate Chunk Peppermint Brownies

Ingredients

  • 1 15 oz can of black beans, drained and rinsed
  • 2-3 very ripe bananas
  • 1/3 cup agave
  • 1/2 cup cocoa powder
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp peppermint extract (I spilled it and add way too much)
  • 1/4 cup raw sugar
  • 1/4 tsp salt
  • 1/4 cup brown rice flour
  • 1/2 cup vegan chocolate chips (I used Enjoy Life Chocolate Chunks)

Do

  1. Preheat oven to 350°F
  2. Process beans in food processor.
  3. Add the rest of ingredients except flour and chocolate chips.
  4. Process until smooth then transfer to a large bowl.
  5. Stir in brown rice flour then chocolate chips.
  6. Pour into non-stick pan and bake for 30 to 40 minutes until done.

Serve

I cut these into bite size pieces for easy eating. They could also be cut into big pieces and served with non-dairy ice cream or even blended into a shake or other ice cream treat. I think these will be a go-to recipe at Christmas paired with candy canes or even red and green sprinkles.

Gratituesday: Anticipation

Yesterday I mentioned that this is a busy week for us. I’m pretty sure the next 6 weeks will be filled with activity. Right now my days are filled with anticipation. It’s not that I’m wishing away today, I’m just really excited about everything that awaits this week.

We are all familiar with anticipation; the smell of something delicious cooking (or baking…mmmm), a long-awaited reunion with a friend, a coming holiday, or even payday. My anticipation is growing for several reasons today.

First, my husband has been out of town since Saturday morning and arrives home today! I’ll pick him up from the airport this afternoon, I cannot tell you how ready I am for him to be back. Yes he was gone most of the time I was sick. 🙁

Second, two of our big kids come home (for 6 weeks) on Wednesday night! I am very ready for them to be here too. My 3 year old is sooo ready for his daddy and siblings to be here. I started teaching him about calendars just to explain when they would be here.

Third, my first Food Demo is coming up on Saturday! I have a dozen people confirmed and a few others that mentioned a month ago they would probably come but I haven’t seen an RSVP from them yet. A few of the ladies coming are already fully plant-based, others are just interested in eating healthier, and some of them are people I’ve “met” through blogging or are friends of friends and I’m super excited to actually meet.

I’ve got a few other things in the works too but they are not imminent. I’ll talk about those in the coming months. They are mostly just big news to me, I don’t think anyone else would bat an eyelash, but that is ok.
