It’s here! The new Fall Plant-Based Meal Plan!

Most weeks I share a free weekly meal plan with you. Every so often, I like to give you a meal plan and shopping list that is ready to print off and take to the store. Don’t worry, it’s still free!

I know how difficult it can be to transition and keep up with healthy eating. I struggle myself, especially when my schedule get’s out of hand.

I always hear such great feedback when I release new meal plans. Sometimes you just need someone to tell you what to do and this meal plan takes the guess work out of eating plant-based.

Not only does this meal plan offer the typical breakfast, lunch and dinner ideas, it comes with a shopping list. I know that shopping lists don’t always work for everyone depending on how many people you shop for. That is why I came up with multiple shopping lists to choose from. Everyone gets the same easy to print menu but you can pick which shopping list is best for you. Choose from:

  • Breakfast Lunch and Dinner for Family of 4
  • Breakfast Lunch and Dinner for Family of 2
  • Breakfast Only Family of 4
  • Dinner Only Family of 4

You’ll also get all the recipes together in one booklet!

Monday

Breakfast: Apple Cinnamon Oatmeal

Lunch: Veggie Wrap

Dinner: Mexican Casserole

Tuesday

Breakfast: Toast with peanut butter (or SunButter) and fruit

Lunch: Mexican Casserole Burrito

Dinner: Chickpea Noodle Soup

When your schedule is crazy and you don’t have time to cook regularly, batch cooking is a great option. Sure, I love my Instant Pot for fast meals but it’s hard to beat assembling food that is already cooked.

When I batch cook, I cook a few foods that I can mix and match together. The most common example in our house is black beans, brown rice and potatoes. We might throw in a pasta to mix it up a bit.

Plant-Based Meal Plan

When I don’t have a lot of time to think about my meal plan I try to focus on the basics. For me, that means potatoes, beans, rice, veggies and fruit. After a great, on-the-go weekend I want easy meals that are filling and hearty.

This meal plan will focus on dinner because I plan to eat oatmeal every day this week! Why, because oatmeal is easy, filling and hearty. I know, I keep things simple.

I’ll switch between my Instant Pot Oatmeal, my favorite Oatmeal Cups and these super easy overnight oats!

I’ll eat leftovers for lunch every chance I get and when I’m out I’ll make a Baked Potato in my Instant Pot.

This plant-based meal plan has nods to fall and is perfect for September.

It may be September but it doesn’t quite feel like fall in Arizona. Thankfully, I work inside with the air conditioner. These 100 degree days always seem to last a little too long. I’m ready for a meal plan of soups and casseroles but the thermometer says salads and fruit.

I know, it is a great problem to have. I’m still living up what I call “Back to School” season with great giveaways and fun products. Soon I’ll be baking it up with some new muffin and granola bar recipes.

This weekly plant-based meal plan is ready for fall with savory soups and sweet breads.

Rice with steamed broccoli and Creamy Brown Gravy

Enchilada Soup 

Thursday

Instant Pot Oatmeal

Banana Bread (or the gluten-free cinnamon version) with Fruit Salad

I’ll go ahead and admit that we may get off track on Thursday and Friday. I’ll be headed to the Blended Conference those days and my family will be fending for themselves part of the time. I love attending blog conferences because at least some of the people there “get me” and get excited about the same kind of stuff I do like SEO and mailing lists.

If you are interested in blogging and social media I’ll be sure to share photos of the conference on Instagram.

In November, I’ll be headed to the Food Allergy Bloggers Conference in Denver! If you’ve ever wanted to attend a conference it’s a great one to attend.

A plant-based meal plan the whole family will enjoy. Easy swaps make it gluten-free.

You’ve probably heard that grocery shopping on an empty stomach is a bad idea. I think meal planning when your hungry is an equally bad idea. In fact, I’m officially adding “eat a snack” to my meal planning tips. Your weekly meal plan will turn out healthier if you aren’t thinking of pizza while you plan it.

Mmmmm, pizza sounds good! See, it’s a problem anyone can fall into. Fortunately, it is still too hot for pizza so that won’t make it into my meal plan but Pizza Pasta will. Sometimes people will ask me why I’ll eat soup or chili in the summer; since it’s so hot here in Arizona we keep our air conditioner really cold so soup is actually enjoyable. On the other hand, turning on the oven will heat up the house so I usually only do that in the mornings or for company.

Just thinking about turning on the oven made me think of cookies. Thankfully, I have a no-bake alternative for those too.

See, I have a problem. That just goes to show how much I need a meal plan to keep me focused. I’m also thinking about trying Veestro to have “just in case” I need a quick and easy meal. If you have experience with them let me know!

We’ve had family in town two of the last three weeks so and haven’t been eating the healthiest meals. This week we are ready to get back on plan. This meal plan will focus on dinners because we’ve been living on the Bob’s Red Mill Oatmeal Cups for easy breakfasts.

A gluten-free, plant-based meal plan the whole family will enjoy.

What’s for dinner? I really get tired of this question but if you have a weekly meal plan it’s a lot easier to answer. Take a look at our weekly meal plan and find out what we are having for breakfast, lunch and dinner!

I’ll do my best to stretch these dinners into multiple meals so I can cook less. My latest recipe, Instant Pot Black Beans and Rice is getting some great reviews. One reader even made it in the Crock Pot for 10 hours with great results! We are having it for dinner on Monday night with plenty of leftovers for lunches!
