A Plant-Based Meal Plan

What do you eat? I get emails from people asking what to eat on a plant-based diet, let me tell you, there is a lot of variety. Maybe nuance is the better word.

Typically people who eat a whole food plant-based diet avoid meat and dairy but that just tells me what they aren’t eating, not what they are eating.

It is easier to say what we don’t eat. 

There are people who high carbs, low carbs, no carbs. Others who are grain-free, or legume-free or nightshade-free. There are also food allergies, intolerances and other restrictions. The list goes on.

What to eat or not eat is a personal choice. I rarely offer opinions unless I’m specifically asked and even then I’ll usually evade the question. I don’t even try to talk people into going plant-based but once they decide for themselves I’m there to coach them along.

I say all of that to ask, what do you eat?

I regularly post meal plans so you can see what I eat, or at least what I plan to eat but what do you eat? Inquiring minds want to know!

Weekly Meal Plan

What a week! Two giveaways ended and the winners have been contacted, my boys have been sick and I was in a car accident. (I’m ok.) I’m not quite up to cooking but my friend Melodee brought us a couple of plant-based meals.

This week’s meal plan will be pretty sparse because I don’t plan on doing much cooking. Thankfully it isn’t slowing my pinning down. My 40+ Meatless Recipes for Lent post is doing well on Pinterest this week.

Our Plant-Based Meal Plan this week will have a slight nod to Valentine’s Day. I’ll also have a new recipe (more like an allergy-friendly treat hack) later this week.

The great thing about living a plant-based lifestyle is that it’s already heart healthy. If that is not Valentine’s worthy I don’t know what is.

A Plant-Based Meal Plan that is perfect for winter weather

Are you snowed in? Last year I wrote a Snowed In Meal Plan for all of you who need a plant-based meal plan but may not have access to a lot of fresh groceries. Take a look!

The weather is beautiful in Arizona. Unfortunately, my little guy (who just turned 5) is sick. We spent about 15 minutes outside anyway just to get some fresh air and sunshine.

I love seeing all of the photos of friends having fun in the snow. While I’m happy to avoid the snow the photos have me longing for soup!

Plant-based meal plan that is vegan and gluten-free

I spent about half of last week sick. Thankfully last week’s Plant-Based Meal Plan had delicious soups (Minestone Soup and Broccoli Potato Soup) to help me recover.

Each week I share a plant-based meal plan this is usually gluten-free and allergy-friendly. My hope is that you’ll be inspired by the meal plan and able to adapt it to meet your needs. See the 2015 Archive for more!

Choosing to Eat Healthy (when problems arise) Meal Plan

Last week our refrigerator went out on Monday morning. We had to throw almost everything away.

I had a few ice chests that I used to save our Silk and So Delicious coffee creamers, plant-based milks, leftovers Enchilada Soup and a few other things. I wasn’t able to stick to our meal plan but I did make healthy choices.

We’ve done our shopping and are starting over with a clean slate. If you  haven’t cleaned out your fridge and freezer in a while make a plan to do it soon!

Choosing to Eat Healthy

I have a group of people going through the Plant-Based Basics eCourse. I shared with them that when problems arise or I get stressed I turn to junk food. Last week I was very intentional about choosing healthy foods, even though it would have been easier to eat unhealthy foods.

Even though I didn’t stick to my plan last week do to our refrigerator situation I made the decision to eat healthy every day. If you are new to a plant-based diet, in the beginning you will need to make that choice every day. Eventually, it becomes a habit.

Breakfast

I’m on an oatmeal kick and have been having it almost every day. I’ve been making a big batch on the weekend to use for a few days then another batch for the end of the week. We also have cereal, toast and sometimes bagels to choose from.

Lunch

  • Leftover Soup and Baked Potato
  • Sandwiches
  • Baked Potatoes made in the Instant Pot
  • Leftover Bean and Rice Burritos

The boys take a packed lunch to school everyday.

Dinner

  • Minestone Soup
  • Bean and Rice Burritos (new recipe)
  • Potato and Broccoli Soup
  • Chickpea Nuggets with Dirty Mashed Potatoes and green beans
  • Easy Asian Noodles

We still have one more day to plan, on Wednesday we are hosting a pot luck. I have no idea what I’ll make for that but at least our fridge is working. Let me know your suggestions!
