Party Worthy Parfait

Welcome back to day 2 of the Vegan Month of Food, a.k.a The Vegan MoFo. Today I’m setting my sights on the parfait.

Making parfait’s are super easy if you have kids they can help or make their own. If you own a large glass bowl or trifle dish they can make a perfect center piece for a party or make these in individual glasses like I did. These are healthy enough for an on the go breakfast but tasty enough for dessert too.

Parfait

Ingredients

  • Vegan yogurt (I use coconut, almond or soy milk yogurt)
  • Diced fruit of your choice (apples, berries, or bananas)
  • Granola
  • Nuts and/or seeds
  • Vegan chocolate chips (hey I’m not judging)

Do

  1. Layer granola, yogurt, nuts/sees, then fruit.
  2. Repeat step 1 two to three times to fill your container.
  3. Refrigerate until ready to serve

Serve

This was a big hit at my Healthy Cravings group served as a dessert. We ate the leftovers for breakfast and lunch for a few days after. A few of my favorite variations include Cinnamon granola with diced apples, Almond granola with mixed berries, granola with vegan chocolate chips and bananas. I like to top this with chia seeds right before serving. My son thinks they are sprinkles! 🙂

This recipe is kid friendly, omni friendly, and gluten-free if you use gluten-free granola.

Brown Rice and Broccoli Casserole

Broccoli and Brown Rice Casserole

I’ve mentioned a Brown Rice and Broccoli dish that my husband and teenage daughter LOVE. I’ve even given an unofficial recipe. Today I’ll give the official version.

I’ve made this with millet and it wasn’t a huge hit with the family but I like it. It would be great with couscous, noodles, or even quinoa. I don’t bake this one because it is still to hot for me to use the oven most days so I guess this isn’t really a casserole. Once it cools down I’ll try an oven version but for now I cook the rice, steam the veggies, and make the sauce in separate pans so it is a little dishwashing intensive.

In our meat-eating days I would make a chicken and rice casserole that used cream of chicken and cream of mushroom soups AND a stick of butter. Bleck! We loved it then but now I can’t imagine! So unhealthy! This is our stand-in casserole.

Brown Rice and Broccoli Casserole

Ingredients

  • 4 Cups Cooked Brown Rice (More or less for depending on the number you are serving)
  • 3 Cups steamed, chopped Broccoli (other veggies could be added)
  • 1 recipe HH Brown Gravy (I use brown rice flour to make this gluten-free)

Do

  1. Pour cooked rice into a large casserole dish.
  2. Add broccoli or other veggies and gently mix.
  3. Prepare HH Brown Gravy recipe and pour it over rice and broccoli. Stir until everything is incorporated.
  4. Enjoy!

Serve

This is so easy to make. It re-heats well so I’ll often make it early in the day and reheat it for dinner. It is a great potluck dish. Many of my readers are the only one’s in their family who are plant-based, this recipe will work for you. Simply set aside half for you and allow your family to add chicken to their portion. This would also be good with a faux cheese sauce instead of the Brown Gravy sauce.

Chocolate No Bake Bites

When I want a delicious chocolate treat I reach for these Chocolate No-Bake Bites. They are the perfect summer treat when it is too hot to turn on the oven.

Chocolate No Bake Bites

Years ago, I would make the most delicious chocolate no bake cookies. You know the ones, they have a ton of butter, milk, peanut butter and oats. Yeah, I loved those!

This version is much healthier for you although not necessarily a “health food.”

I almost always have all of the ingredients I need (thanks to my pantry staples). These can also be made allergy-friendly by using gluten-free oats and a peanut butter substitute like SoyNut Butter or SunButter.

Chocolate No-Bake Bites

Chocolate No Bake Bites

Ingredients

  • 2 Tbsp Cocoa
  • 2 Tbsp agave or maple syrup
  • 1 tsp vanilla
  • 1 banana
  • ¼ cup peanut butter (or other nut or seed butter)
  • 1 cup oats (use gluten-free if needed) added ¼ cup at a time.
  • ¼ cup vegan chocolate chips (optional)

Instructions

Step 1 – Mix

Mix together cocoa, agave, and vanilla in a medium-sized mixing bowl. This will take a little while to do but it will come together. Once these 3 ingredients are mixed together they look and taste like Hershey’s syrup that we put on ice cream as a kid, it isn’t quite as sweet but it is close.

Step 2 – Mash

Mash in banana and stir.

Step 3 – Mix in Peanut Butter

Mix in peanut butter, you can add another ¼ cup for a stronger PB taste.

Step 4 – Stir in Oats

Stir in oats, ¼ cup at a time. If your mixture looks to dry don’t use all the oats.

Optional: add in the chocolate chips.

Step 5 – Spoon onto Wax Paper

Spoon onto a wax paper lined plate and place them in the freezer or far away from little hands that might dig in too early. You could smooth them into balls or flatten them into cookie shape if desired.

I store these in the freezer and grab one or two out for an after dinner treat. I left a few on the counter and they did “set up” nicely but not as well as my old-fashioned dairy-filled version that is off-limits. My recipe made about 17 small bite sized cookies.

2 Step Quinoa Taco “Meat”

Quinoa taco “meat” is a satisfying, protein-rich option that mimics the texture and flavor of traditional ground meat but with all the benefits of a plant-based diet. Whether you’re vegan, vegetarian, or just looking to incorporate more plant-based meals into your diet, quinoa taco meat is a fantastic addition to your meal plan.

Why Choose Plant-Based Tacos?

One of the greatest advantages of plant-based alternatives is the reduction of saturated fats and cholesterol commonly found in animal products. Quinoa taco meat, in particular, provides a hearty, nutritious filling for your tacos, burritos, or salads without the downsides of traditional ground meat. But why quinoa?

Quinoa Taco “Meat” Recipe

Ingredients

  • 2 cups cooked quinoa
  • 1 tsp salt
  • 1 tsp granulated onion
  • 1 tsp granulated garlic
  • 1 tsp chili powder
  • 1/2 tsp cumin 
  • 1/2 tsp black pepper
  • 1/4 cup tomato sauce

Instructions

Step 1 – Season Quinoa

Stir all seasonings into quinoa. We like a lot of spice so feel free to pair this down if you’re not crazy about a lot of seasoning. 

Step 2 – Add Tomato Sauce

Stir in tomato sauce, I happened to be out so I used about 2 tsp of tomato paste and a little water. If seasonings are not mixing well add a little water or veggie broth. 

Storage

Storage is simple and ensures you always have a quick, healthy meal option on hand. Once you’ve prepared the quinoa taco meat, allow it to cool completely before storing it.

Refrigeration

For short-term storage, place the cooled quinoa taco “meat” in an airtight container and store it in the refrigerator. It will stay fresh for up to 4-5 days. When ready to use, simply reheat it on the stovetop or in the microwave until warmed through. You can add a splash of water or vegetable broth to keep it from drying out during reheating.

Freezing

For longer storage, quinoa taco “meat” freezes well. Transfer the cooled mixture into freezer-safe containers or resealable freezer bags, removing as much air as possible to prevent freezer burn. Be sure to label the containers with the date. It will stay good in the freezer for up to 3 months. When you’re ready to use, thaw it in the refrigerator overnight, then reheat as needed.

Whole Wheat Cherry Muffins

Whole Wheat Cherry Muffins that are plant-based and delicious.

One year ago if someone would have mentioned whole wheat muffins I would have thought of dry, unappetizing bricks. I couldn’t be more wrong. These plant-based are delicious.

Now that I’ve been enlightened I think of delicious treats, add in a little fruit and I think of tiny bites of heaven. I love a good whole wheat product. 

Before we transitioned to a plant-based diet, my idea of muffins were closer to cupcakes. Super sweet and full of oil.

These muffins have no added fat or dairy making them a healthy choice.

Cherry Muffins that are whole wheat and vegan.

Whole Wheat Cherry Muffins

These are a nice dessert, snack or as an addition to bunch.  You can substitute blueberries for the cherries for variety. These are not super sweet which I know a lot of you appreciate.

Cherry Muffins are whole wheat, plant-based and vegan.

How to Make Whole Wheat Cherry Muffins

Ingredients

  • 2 cups whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup turbinado sugar
  • ½ cup applesauce
  • 1 cup plant milk
  • 1 cup diced cherries (I use frozen cherries that I buy from Costco)

Instructions

Step 1 – Preheat

Preheat oven to 350 degrees.

Step 2 – Mix

In a big bowl, mix all dry ingredients (flour, baking powder, baking soda, salt, sugar).

Step 3 – Add Applesauce and Milk

Add applesauce and milk and mix.

Step 4 – Add Cherries

Add cherries and mix until just combined.

Step 5 – Pour Batter

Pour batter into paper muffin liners until 2/3 full.

Step 6 – Bake

Bake for 25 minutes.

Step 7 – Test

Test for doneness with a toothpick. Then let cool.

Total Time 35 minutes
