Birthday Week Meal Plan

We’ve been celebrating, two of our kids had birthday’s this week. Unfortunately we’ve been a little under the weather too. I contemplated skipping the Meal Plan this week but a few of you spoke up saying you’d miss it. I waited until tonight to post it so I could show you a few pictures from our celebration.

I’ve been making a lot of new recipes lately but I don’t have much time to work on staging, photographing and editing so I’ve only been sharing them with people who come to my local events or those who buy a Custom Meal Plan. Don’t worry, many of them will get added eventually and others are being set aside for my next book.

birthdayAny time I ask my son to smile he does something like this. It pretty much captures his intense awesomeness. He asked for a cake with zebra stripes and angry bird candles and a #5 candle that we could set on fire. I am to please.

 

Birthday Week Meal Plan

The person with the birthday always gets to pick the menu on birthdays. My pantry got cleaned out this weekend and my fridge is fully stocked with fruit and veggies. It’s gonna be a good week.

Breakfast

  • Baked Sweet Potato
  • Apple, Raisin, Cinnamon Breakfast Rice
  • Vegan Breakfast Scramble
  • Sunbutter Toast with Fruit
  • Blueberry Oatmeal

Lunch

  • Bean and Grain Bowl
  • Veggie and Hummus Wrap
  • Bean Burritos made with Unfried Black Beans and Cilantro Lime Quinoa
  • Sunbutter Sandwiches with fruit
  • Baked Potatoes with Veggies

Dinner

  • Birthday Dinner
  • Leftover Cheesy Broccoli and Brown Rice Casserole
  • Pasta with Marinara Sauce and steamed asparagus and salad
  • Veggie Burritos with Cilantro Lime Quinoa
  • Enchilada Soup

In the last two months we have celebrated 5 birthdays in our immediate family (although one of our son’s doesn’t live with us anymore). We now have a break from birthdays but I’ve been working on several different gluten-free and vegan cake recipes. I think I’ll keep at it, besides I like cake, win-win.

The Birthday Weekend

This last weekend one of my son’s turned 4 years old. There have been a lot of birthday’s lately. We have celebrated all 4 of us in the last two months. Additionally, one of our sons that lives in Michigan with his mom just had a birthday and turned 14.

For the actual celebration we went out for pizza then came home for birthday cake. We have a local pizza place that makes gluten-free pizza so even my 2 year old can have pizza too. My 4 year old ate 3 big pieces of pizza and wanted more but we told him to save it for the next day.

There was a lot of discussion on Facebook about the Gluten-Free and Vegan Chocolate Cake. I’ll be sharing the recipe next week. I think it is a keeper. I sent the recipe out to several testers but I’m still waiting for their feedback.

My son got to pick out his present from us but was very happy to open a present from his Grandpa. My son LOVES his presents!

We had a lot of fun on Saturday too. We went out to the river, the weather was warm, and we all had a great time. My husband regularly takes the boys out there for a picnic but this was the first time they brought me.

At one point we heard a thundering noise, I noticed the other families were looking behind us. All of the sudden two horses came running down the embankment and crossed the river. The horses were very close, I ran over the boys but they weren’t fazed, apparently wild horses showing up isn’t a big deal to them.

The boys went back out to the river on Sunday too. It is their new favorite place. Pretty soon the crowds will take over so I’m glad they have been able to enjoy it.

Stir-Fry-Bleh!

Stir-Fry never sounds good to me, but in the last 4 months of eating this way it has been awesome every time I’m made it. Truth be told, I am NOT a lover of vegetables. Shocking I know, what with this Plant-Based Diet and all. Even still, every time I made stir-fry it tasted amazing, as if God worked a miracle right there on my plate.

Until last night. The stir-fry was awful. I’m not sure what I did different but bleh, yuck, and more bleh!!! By popular vote stir-fry will not return to the Meal Plan for at least a few weeks.

Sometimes things just don’t turn out. Sometimes it happens several times in one week.

Take these muffins for example. The first time I made them they were good, but not quite sweet enough more my taste. They were perfect for my husband who, unlike me, isn’t cursed with a big honking sweet tooth.

They sank, were wet, and just plain pitiful. On the plus side they tasted great. I had hoped to use these for my 1 year old’s birthday, but that wasn’t going to happen.

Third Attempt

The next day I made these. Big difference. I finally realized what I did wrong. I left out 1 cup of flour. Genius I know. But I learned a lesson: when reading chicken scratch directions pay careful attention to detail. And, follow the recipe, I always want to tweak them.

The third attempt was good enough for a Birthday Celebration! And this is how we do it.
