I’ve been on a soup kick lately and I expect this week to be no different. I’ve been remaking my old favorites in my Instant Pot so I can share the directions for all my IPers. I also plan to start my bread baking again but every time I plan to do it, it gets hot again. Despite the warm weather here in Arizona, I’m on a fall kick and gearing up for Thanksgiving.

Plant-Based (Vegan) Meal Plan Monday

Almost…so close. One more day until September and I can almost taste it. I’m pretty sure it tastes like pumpkin spice.

I may need to make a batch of Pumpkin Cupcakes to celebrate. Or, if it’s too hot I’ll just make this easy 2 ingredient fruit dip!

Those of us in Arizona are looking forward to the lower temperatures. I really need to plant my fall garden but I’m waiting for it to be a little cooler. Cilantro doesn’t grow in hot temps and this girl loves Mexican food. If I get my garden going I’ll be sure to add more Mexican food to my weekly Meal Plan Monday post.

Breakfast

Even my breakfast cravings are in tune with fall favors. Take a look at what I mean. Cereal will be my backup plan.

  • Apple Cinnamon Oatmeal
  • Breakfast Tacos
  • Maple and Brown Sugar Oatmeal
  • Pumpkin Muffins (GF) or my Whole Wheat Pumpkin Bread
  • Fruit, Granola and Smoothie

Lunch

My first grader will get lunch box food while the rest of us eat lunch at home. One of the great things about working from home is that I can just run to the kitchen and heat up leftovers. Often, Jim will make me lunch and deliver it to my desk. Isn’t he a sweetheart?

  • Soup and Sandwiches
  • Leftover Veggie Pot Pie
  • Burritos
  • Steamed Veggies (I like to use potatoes, carrots, onions, broccoli and more)
  • Bean and Rice Bowl

Dinner

I love the dinner’s I’ve planned for this week. The meal plan contains soups and casserole-type meals but I can lighten them up by serving with a side salad.

  • Veggie Pot Pie
  • Chickpea Noodle Soup
  • Italian Bake
  • Lentil Tacos and Mexican Rice
  • Potato Kale Soup

Have you made the move to fall foods yet or are you still hanging on to summer?

It’s ok to hang on a bit longer. I’m not ready to give up cantaloupe and pineapple yet.

Meal Plan Monday: Halloween Week

Don’t let the title fool you. I don’t really get into Halloween. I won’t be dressing up or decorating my yard. I will spend a few hours passing out candy and visiting with our neighbors. You see, in our neighborhood Halloween is the one night a year all of our neighbors get together and catch up. We all sit outside in our driveways and pass out candy. It’s a lot of fun.

Since it’s Halloween week I may bake a few treats but I have even more treats in store for my readers including a giveaway and a surprise new program. I’m extremely excited about both.

Breakfast

I just can’t get enough apples. We eat them all year but they taste best in the fall.

  • Apple Cinnamon Breakfast Rice
  • Apple Oatmeal
  • Gluten-Free Apple Muffins
  • Toast with SunButter or Soy Butter and sliced Apples

Lunch

My youngest son and I usually eat leftovers or something quick. I pack a lunch for my 5 year old to eat at school.

  • Baked Potatoes
  • Pasta and a simple sauce
  • Chickpea Salad and raw veggies
  • Veggie Soup and salad
  • Leftover Chili

Dinner

My husband has requested 3 things this week (the first 3 on the dinner menu). He doesn’t ask for much so I usually try to accommodate his request.

  • Veggie Pad Thai (yes he requests this every week)
  • Cheezy Broccoli and Rice Casserole in the Crock Pot
  • Chickpea Salad (the savory one) to eat on sandwiches
  • Fiesta Pasta (recipe coming soon)
  • Chili with baked potatoes

If you have food allergies you may have heard of the Teal Pumpkin Project. It was started by the Food Allergy Community of East Tennessee (FACET) a few years ago. Food Allergy Research & Education (FARE) spread the word this year. Read more about it here.

Meal Plan Monday: Quick Meals and Comforting Soups

Meal Plan Monday

September signals fall sports, dropping temperatures and back to school activities (read homework). Thankfully, I’ve found my back to school routine for the most part. Our evening sports practices make for hurried dinners at least twice a week. I love making quick meals and comforting soups, especially when they are easy.

This weekend is my Gluten-Free Lunch Box Class. If you live in the Phoenix area you don’t want to miss it! The deadline to sign up is Tuesday! Next week I’ll be releasing the New Meal Plans so be on the lookout for more clues this week on Facebook and Twitter!

Meal Plan Monday

Breakfast

I know I’ve mentioned it before but I’ve fallen in love with Oatmeal again. The slightly cooler mornings make it my go to breakfast. I always use Bob’s Red Mill Gluten Free Oats (it’s a 4 packs).

  • Maple and Brown Sugar Oatmeal
  • Apple Cinnamon Oatmeal
  • Cereal (on busy mornings)

Lunch

I pack a lunch for my kindergartener but my preschooler and I eat at home.

  • Sandwiches with apple slices
  • Green Chili Dip and Tortilla Chips and Rice
  • Bean and Grain Bowl
  • Baked Potatoes
  • Leftovers

Dinner

I just restocked my pantry so I get to have some of my favorites this week.

  • Veggie Pad Thai (my favorite meal and it’s quick and easy)
  • Minestrone Soup made with Gluten-Free Pasta
  • Pasta covered in Creamy Italian Salad Dressing (yes it is also a fabulous pasta sauce) and steamed veggies
  • Fiesta Mac is coming soon!
  • Hearty Lentil and Barley Soup but I’ll substitute rice or millet for the Barley

I’m thinking of doing a little baking too! Maybe these Gluten-Free Pumpkin Muffins or Gluten-Free Apple Muffins with hit the spot. They would taste amazing with Sarah’s (warning: contains nuts).

Last week was Meal Planning Week here at My Plant-Based Family. After focusing on Meal Planning for a week it makes coming up with another Meal Plan the last thing on my mind. I’ve been procrastinating for hours. In the mean time I’m let me kids play out, I ate leftover birthday cake (for breakfast), a Chickpea Salad Sandwich (for snack), got tax documents together and took care of mommy stuff like changing diapers and singing songs.

I finally started checking my fridge, pantry and freezer to get meal ideas for the week.

Plant-Based Meal Plan

Breakfast

I’ve been changing up my breakfast routine. For years, I ate oatmeal every morning but my youngest can’t have oats (even gluten-free oats) so I’ve been shying away from them. Recently Sarah at Gazing In published her latest book Oats Gone Wild that has rekindled my interest.

  • Oatmeal from Oats Gone Wild
  • Baked Sweet Potatoes
  • Breakfast Hash (I still need to get this recipe posted)
  • Smoothies
  • Gluten-Free Pumpkin Muffins (I baked some in a donut pan)

Lunch

I like to rely on leftovers for lunch when I have time. I’ll often make my kids a quick sandwich, the sooner lunch is done the sooner we can attempt nap time.

  • Leftover Chickpea Salad on toast
  • Soynut Butter Sandwiches with fresh fruit (I just discovered and love Soynut Butter)
  • Veggie Stuffed Pita
  • Taco Soup
  • A giant salad with leftovers

Dinner

Our afternoons and early evenings are Very busy these days. I’ll be sticking to easy entrée’s when possible and making some of these meals early in the day and reheating them just before dinner.

  • Baked Potatoes with Steam Broccoli and my brown gravy
  • Bean Burgers with Green Beans and Baked Potatoes
  • White Enchiladas with Cilantro-Lime Quinoa
  • An Asian Noodle Dish (I don’t have a specific recipe in mind yet)

Virtual Vegan Potluck: Butternut Squash & Quinoa Salad

Butternut Squash and Quinoa Salad

Welcome to My Plant-Based Family and the Virtual Vegan Potluck. Today over 100 bloggers are joining forces to entice you with delicious vegan recipes. I signed up to bring a salad. I chose to incorporate two seasonal flavors, butternut squash and fresh cranberries.

Butternut Squash & Quinoa Salad with Oil-Free Cranberry Dressing

 Ingredients for Butternut Squash & Quinoa Salad 1 serving (dressing recipe below)

  • 2-3 cups of your favorite salad greens
  • 1 cup cooked quinoa
  • 1/2 cup roasted or steamed butternut squash
  • 1 tsp freshly grated ginger
  • 2 Tbsp dried cranberries
  • 1/4 of an onion

Do

  1. Cut onions into rings and cook in a hot skillet, stirring regularly until onions are crispy.
  2. In a medium bowl mix cooked quinoa, squash and cranberries together and carefully stir in grated ginger.
  3. Spoon quinoa mixture over fresh greens. Top with cooked onions and oil-free cranberry dressing.
  4. If desired toss everything together.

Tip: My husband prefers this salad without the onion, feel free to leave it out.

Oil-Free Cranberry Salad Dressing

Ingredients (2-4 servings)

  • 1/4 cup fresh cranberries
  • 1 Tbsp Red Wine Vinegar
  • 1 tsp freshly grated ginger
  • zest from 1 orange
  • 1/4 cup fresh orange juice
  • 2 Tbsp maple syrup
  • 1/4 cup water
  • 1/4 tsp xanthum gum

Do

  1. Put all ingredients in a blender or food processor (I used my Magic Bullet) and process until everything is smooth.
  2. Taste and add more maple syrup if it is to tart or add more water or juice if dressing is too thick.

Tip: If you don’t have xanthum gum you can get away without it if you do not add the water. The dressing will be more tart and thinner but works great in a tossed salad. You could also add a little corn starch instead.
