Meal Plan Monday: It May Be Fall But…

This time a year poses a conundrum for me. As you know if you’ve been here for a while I live in Arizona. I should be on the Arizona Tourist Bureau I love AZ so much.

The problem is that the weather here is different from the rest of the country. Most people here aren’t quite ready for soup and chili even though it’s “Fall” in many places. I try to strike a happy medium, plus I am ready for those delicious comfort foods. I made Veggie Pot Pie last night.

So I try to keep a middle of the road approach to Meal Plans. I know I can’t make the perfect meal plan for my friends in Michigan, Africa or Australia. Hopefully you will find something that inspires you. Or do what I do and take a look at the Recipe Page.

Breakfast

We recently reintroduced oatmeal to our house and we are loving it. We have a few other breakfasts for busy days though.

  • Maple and Brown Sugar Oatmeal
  • Apple Cinnamon Raisin Breakfast Rice
  • Toast with WOWBUTTER and Apple Slices (Wow Butter is a GMO-Free soy-based alternative to peanut butter. We love it!)
  • Cereal

Lunch

I usually utilize dinner leftovers for my lunch and pack a lunch for my 5 year old. I usually post his lunch pictures on Instagram.

  • Taco Salad
  • Chili topped Baked Potatoes
  • Soup and a Baked Potato
  • Veggie Wraps
  • Leftover Veggie Pot Pie ( I have an older recipe here but I’m working on a new one. This one uses a little Earth Balance and wheat flour. The new one I’m working on is GF and oil-free.)

Dinner

  • Texas Style Chili with Baked Potatoes
  • Burritos with Unfried Black Beans, Cilantro Lime Quinoa and Pico de Gallo.
  • Chickpea Noodle Soup (we use GF pasta)
  • Italian Bake (an oldie but a goodie)
  • White Enchiladas

Cookie Bars (Vegan, Gluten-Free and Nut-Free)

Gluten-Free, Nut-Free, Vegan Cookie bars

I first made this recipe when I was trying to make cookies. It tasted good but the consistency was off. I tweaked it to develop the Sunbutter Cookie Recipe (also GF and Vegan) that I shared last week. This recipe is easier and works really well as Cookie Bars. They are very sturdy and perfect for lunch box packing. My kindergartener ate them daily after school.

Gluten-Free, Nut-Free, Vegan Cookie bars

I make this recipe with Sunbutter because my youngest son is allergic to peanuts and tree nuts. You could try this with peanut or almond butter if you are not allergic. Also, if you do not have brown rice flour and sorghum flour you could use a gluten-free baking mix. If you make it with any adaptations I’d love to hear how they go. I’m considering making them with oat flour next. I imagine they would work fine with wheat flour also but I haven’t tried it.

Gluten-Free, Nut-Free, Vegan Cookie bars

Cookie Bars

Ingredients

  • 1/2 cup SunButter
  • 1/2 cup sugar
  • 1/2 cup Brown Rice Flour (this is the best deal I’ve found)
  • 1/2 cup Sorghum Flour
  • 1/2 tsp Xanthan Gum
  • 1/2 tsp vanilla
  • 1/8 cup rice milk
  • 1/2 cup Enjoy Life Semi-Sweet Chocolate Chips (optional)

Do

  1. Cream Sunbutter and Sugar together.
  2. Dump the rest of the ingredients together, except chocolate chips.
  3. Mix well, adding extra rice milk if needed.
  4. If using chocolate chips mix them in or just sprinkle them on top.
  5. Pour into a 9×9 pan that is lined with parchment paper.
  6. Bake at 350 degrees for 12 minutes.
  7. Allow to cool before removing from pan and cutting into bars. Store at room temperature in an airtight container for about 5 days.

Serve

This is perfect for an after school snack or in the lunch box.

The odd thing is that my super picky kid loved these and the one who eats everything didn’t like them. He doesn’t always want to try new things because of his food allergies so I don’t force it.

Sweet and Tangy Pasta Salad is Potluck Heaven

Sweet and Tangy Pasta Salad is perfect for potlucks! Its allergy-friendly and really easy to make.

Are you a pasta salad kind of gal (or guy)? The boys in my house love this Sweet & Tangy Pasta Salad! It’s incredibly easy and a perfect dish to share at potlucks or cookouts.

We use gluten-free pasta because of my son’s wheat allergy. This recipe can be altered based on your available ingredients. I’ve add chickpeas to make it more of a “main dish” but we usually use it as a side dish.

Sweet and Tangy Gluten-Free Pasta Salad is picnic perfect

Sweet & Tangy Pasta Salad

Ingredients

  • 1 8 oz package pasta (we use gluten-free spirals)
  • 1 cup cherry tomatoes, sliced in halves
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, diced
  • 1 recipe Sweet & Tangy Salad Dressing

Do

  1. Cook pasta according to package directions, set a time so you don’t over cook. You want an al dente pasta.
  2. While pasta is cooking prepare all of the veggies and salad dressing.
  3. When pasta is done drain it well and run it under cool water, drain again.
  4. Mix all veggies and salad dressing into the pasta.
  5. Refrigerate until ready to serve.

Serve

This pasta is best chilled but can tolerate being at room temperature for a little while. It would also be a good addition to a lunch box with an ice pack.

Sweet and Tangy Pasta Salad is perfect for potlucks! Its allergy-friendly and really easy to make.

This was perfect with our Vegan Barbecue Sandwiches. I definitely recommend taking this to a potluck, it will be a hit and it’s very allergy-friendly. You can also try my Potato Salad and Portobello Burgers.

Meal Plan Monday: Summer Meal Routine

Meal Plan Monday! Vegan and gluten-free Meal plans!

Does your cooking style change in the summer? I like simple all year-long but in the summer I DO NOT want to spend time in the kitchen and I pretty much refuse to turn on the oven. I’ll occasionally make an exception, but rarely.

I also take advantage of batch cooking. For example I’ll cook a large pot of quinoa without any seasoning to be used for Breakfast, Lunch and Dinner. I double batch of Mexican Rice will find its way into burritos, salads and as a side dish. The Crock Pot comes in handy for beans to be used in most meals.

Plant-Based Meal Plan

Breakfast

I’ve been embracing chia seeds at breakfast but most days are cold cereal. I’ll often sprinkle chia on whatever we are eating.

  • Chia porridge with maple syrup and fruit.
  • Toast with WOW Butter and apple slices.
  • Cereal and rice milk
  • Breakfast Rice with raisins and diced apples
  • Breakfast Quinoa with blueberries and chia seeds

Lunch

Batch cooking saves lunch time every day. Most of the time I don’t even reheat the food because my kids like leftovers cold.

  • Baked Potatoes with raw veggies
  • Green Chili White Bean dip with Salsa and Baked Potato
  • Mexican Rice and Unfried Black Bean Burrito
  • Pasta Salad
  • Sandwiches with lots of fruit

Dinner

I’m all about ease and keeping the house cool these days. Most of these dishes are quickly mixed together for a meal. I cook large batches of foods, like Mexican Rice, to use in multiple dishes throughout the week.

  • Taco Salad
  • Quinoa Salad
  • Veggie or Portobello Fajitas with Mexican Rice and Unfried Black Beans
  • Pizza Pasta with a garden salad and Sweet & Tangy Salad Dressing
  • CHICKpea Salad sandwiches or wraps

My kids are eating lots of fruit and some veggies for snacks. The top picks this week are apples, blueberries, grapes, nectarines, apricots, cherries, plums, bell peppers, cucumbers and carrots.

My kids are allowed to eat fruit almost any time. If they still have a meal on the table they may have to eat it first but raw fruit and veggies between meals is the norm. We don’t often have chips, crackers, or other processed foods available.

Get out of the rut with a Plant-Based Allergy Friendly Meal Plan

Meal Plan for a plant-based diet! It's also gluten-free and nut-free! Perfect for anyone trying to eat healthy this summer!

If you’ve been in a cooking run summer is the perfect time to break out of it. I hope you’ve noticed the new summer fruit and veggies that are available this time of year. We just bought our first bag of plums, last week it was apricots. Instead of reaching for an unhealthy snack choose seasonal fruit. Make sure you buy extra and keep some in the freezer for smoothies.

If you struggle to get more fruit in your diet try a piece of fruit with every meal and reach for fruit in place of dessert.

For those of you who struggle to include enough veggies throughout the day try adding salads to your meals. Make sure to include your favorite seasonal veggies. Follow me on Pinterest and Instagram for more ideas. If you really aren’t a salad person and can’t be persuaded try raw veggies and a good veggie dip.

My Skin Cancer Scare plus 4 Easy Tips to Keep you Safe in the Sun

4 Tips to Stay Safe in the Sun

I grew up in the sun. As a kid we played outside constantly. We rode bikes, drank from the hose and rarely wore shoes; basically it was a big, fun adventure. My grandparents had a house on the lake that we would visit on weekends in the summer. I don’t know how many times we swam across the lake to the beach. Even now I dream of living on the water one day.

I always had the best sun tan, until I was 16 and got a job. After that my tan was limited to a couple of painful burns each year. I rarely wore sunscreen.

 The C Word

In my 20’s I learned that my grandmother had several cancerous moles removed. I’ve always had a lot of moles and knew I needed to get them checked, but I waited. At my yearly check up my doctor mentioned that I should have my moles checked, this time I didn’t wait.

I found a dermatologist who came highly recommended. He conducted an inspection and found a lot of suspicious moles. He removed them and sent them to the lab. About a week later I heard back. They were all fine, except one.

I returned to the dermatologist for an outpatient procedure to remove the underlying tissue where the mole once was. I may have mentioned how squeamish I am. Before anything was done, anything, I threw up…then I passed out. They wanted to reschedule but I didn’t want to start all over so I begged them to proceed.

He removed the tissue, I got 8 stitches, and we waited for what seemed like forever for the results. A week or two later we learned that the underlying tissue was healthy. For 5 years I returned every 6 months to have my moles checked again. I’ve had a few more removed through the years but they have all been normal. Now I only get them checked once a year.

I have scars. Though they have faded through the years these scars remind me that I am vulnerable. They remind me that I must take care of my skin and protect it.

I want to share some very important tips to keep you and your family safe in the sun. I was so thankful to learn about these recently at Whole Foods Market Paradise Valley. I am very serious about keeping my kids safe, including their skin.

 4 Easy Tips to Keep You Safe in the Sun

1. Cover Up!

I know you want to look cute and tan, me too but it is not worth getting a burn (in the short-term) or cancer (in the long run). We regularly dress our boys in long sleeves and hats in the summer.

2. Wear a Mineral Sunscreen

Mineral sunscreens use zinc oxide and sometimes titanium dioxide that stay on top of your skin to block the sun’s rays. They work immediately. Alternatively, chemical sunscreens are absorbed into your skin and must be applied before you go outside because it takes time to become effective. Avoid that by only wearing mineral sunscreen.

3. Use Broad Spectrum Sunscreen

Broad Spectrum means it protects you from UVA and UVB rays. UVA rays cause sun damage including cancer while UVB rays cause sunburns.

4. Reapply!

Sunscreens need to be reapplied at least every 2 hours but more often if you are sweating or swimming. Don’t forget to apply sunscreen to your ears, the tops of your feet and the back of your legs. Often we only remember to apply to our face and shoulders.

Sensitive Skin

I’m always very careful about what we put on our skin, especially my son’s. He has a lot of allergies and very sensitive skin. He often gets hives from exposure so I read and reread labels. I’m happy to have found a couple of options that I feel are safe for his skin. With any product you NEED to read the label to make sure it is safe for you if you have allergies or sensitivities.

Goddess Garden Organics are vegan and allergy-friendly. I use their continuous spray natural sunscreen. It sprays on in a nice even mist. I give it a quick rub to catch any areas I missed.

Badger Balm is another allergy-friendly company. Many of their products contain beeswax so they are not vegan but their new sunscreen lotions will be.

I use DeVita’s Protective Moisturizer daily.  It’s SPF 30+ and goes on smooth and sheer. I often wear makeup over and it is never oily. They have a tinted version I plan to try next. DeVita Skin Care products are all vegan.

All three of these products can be found at your local Whole Foods Market. The staff in the Whole Body department is very knowledgeable and helpful.
