It’s almost Thanksgiving and Christmas will quickly follow. Do you have a plan for the holidays?

Food may be at the center of most holiday traditions but that doesn’t mean you have to eat poorly. In fact, many of your traditional favorites can be adapted and made healthier (and allergy-friendly).

You may need to substitute eggs, butter or oil but it can be done. I highly recommend you test each dish before the big day or follow a trusted recipe.

The Holidays can be a Slippery Slope

The problem with straying away from healthy eating habits during the holidays is that most of us don’t stop with one meal. We polish off a turkey dinner and dairy-filled sides with a couple of pieces of pie, then start all over the next day with leftovers. Then we have a “hankering” for rich and fatty foods that can only be quenched with Christmas cookies, cakes and cheese.

Fire Up the Grill

I’ve already been proclaiming that Summer is here. It may be Spring for you but it is Summer in Arizona. Since Memorial Day is only days away I wanted to leave you will some grilling ideas.

If you get invited to a barbecue you will be prepared. Just don’t go empty-handed!

Portobello Mushrooms

You can’t go wrong with grilling Portobello Mushrooms. Consider grilling Portobello Steaks, Portobello Fajita’s, or Portobello Burgers. Mushrooms are incredibly versatile and work great on the grill. Since they are large they “fit” better and don’t fall in the fire.

Veggies

Many veggies can be grilled as well. Summer Squash, Onions, Bell Peppers, Tomatoes, and Asparagus. I even grill Avocados, yes you read that right.

You can arrange veggies on skewers or just toss them on the grill. There are also really neat products available like this Emeril Grilling Veggie Basket that you can flip over to allow both sides to cook. Or, this Weber Style Professional-Grade Vegetable Basket that is open on top for easy stirring. I always loved eating kabobs but when grilling for company (and kids) these grill baskets make much easier options in my opinion. They are even Father’s Day gift worthy!

Side Dishes

Baked Potato Wedges, Potato Salad, Dirty Mashed Potatoes, Baked Beans, Chip & Salsa or Pico De Gallo are great side dishes if you are planning to grill.

If you are getting together with friends or family I always enjoy bringing stuff like chips and salsa, guacamole, Pico de Gallo, Green Chili White Bean Dip, Unfried Pinto Beans, Faux Cheese Dip for dipping. I’ll often bring a quinoa-black bean salad too. I like to bring chips and dips because these look “normal” to everyone else. I feel like dips are always safe to bring to a party. I sometimes feel weird bringing a whole separate entrée (unless I was asked ) to someone else’s party.

Drinks

Don’t forget to BYOB! I don’t drink alcohol and I’m rarely invited anywhere with it as an option (actually I’m rarely invited anywhere at all, I think everyone is too intimidated by my son’s allergies. That is the reason I’m going with. I’m fabulous, who wouldn’t want to hang out with me? I digress.) I prefer to bring my own drinks. Usually it is just water. I’m a water snob. We have a filter so I have a hard time drinking tap water.

Basically, don’t assume there will be something you can drink. I regularly attend events where lemon water is the only option. I prefer my water straight up. If you love lemon you must check out Sarah’s Stevia Lemonade at Gazing In!

Dessert

Probably the most important part of any cookout. I don’t typically grill dessert but we occasionally grill peaches. Just cut them in half, remove the pit and put them on the grill. Serve them with vegan ice cream! It will taste kind of like peach cobbler without all the work.

If I’m taking dessert somewhere it is almost always my Gluten-Free Vegan Brownies. They travel well, don’t need to be refrigerated and everyone loves them.

Today is Cinco de Mayo. For most of you that is just an excuse to eat Mexican food, you know that I don’t need an excuse to eat Mexican food. It’s pretty much on the menu daily at our casa. It takes a lot of thought to branch out into anything else for me.

Today I’m going to forgo the normal Meal Plan and share 7 Quick and Easy Mexican Food Ideas! This is for those of you who haven’t planned and have NO TIME! Go ahead and admit it, embrace it even.

Each of these ideas can be ready in less than 30 minutes, some much less. If you are exhausted, frustrated or feel like running away from home then these recipes are for you.

Plant-Based Valentine’s Day Meal Ideas

Valentine’s Day Meal Ideas are saturating every form of social media. I wasn’t planning on sharing any ideas but I realized some of you may need a little push in the right direction if you are avoiding meat, dairy, or allergens like wheat or nuts. I don’t plan to do anything special for my family, I’m hoping for a date night instead.

Plant-Based Valentine’s Day Meal Ideas

1. Breakfast for Dinner!

Heart-Shaped pancakes with cherries and chocolate chips. Your kids will love this idea and never forget it. I use a Gluten-Free Mix by Maple Grove Farms that I find at Target or Walmart. For the life of me I can’t make good GF pancakes without a mix.

2. Go Italian

I’ve always associated Valentine’s Day with Italian food, it probably goes back to Lady and the Tramp’s iconic meatball scene. Thankfully, I have several recipes to choose from, some are more kid friendly than others. My Gluten-Free Lasagna is a crowd-pleaser; it is husband, kid, and teenager approved. My teen even thought there was cheese in it. (Insert evil laugh here.)

If you are feeding toddlers you may want to go with the Pizza Pasta using small noodles for small hands.

Since it’s for Valentine’s Day try to pick veggies your kids will like best. For my youngest that is broccoli!

3. Steak and Potatoes

Portobello Steaks and Potatoes can take you back to the feel of your omni days without the meat. If your Valentine likes mushrooms this is a great meal. I recommend making either a baked potato or Dirty Mashed Potatoes and steaming asparagus.

4. Picnic at the Park

If you have small kids but would still like to catch a moment with your Valentine try having a picnic at the park. Yes, your kids will be there but they will probably be busy stealing another kids toy or pulling someones hair. Make CHICKpea salad sandwiches and easy finger foods to enjoy. On a side note the weather is in the 70s this week where I live, don’t hate me.

5. Dinner and a Movie at Home

Find a fun movie to rent and order take out or make an easy Crock Pot meal. I love my Easy Crock Pot Mexican Casserole because it comes together in minutes and I only have to wash the Crock Pot. I really dislike doing dishes. Later you can watch your movie as you snack on popcorn.

If you have kids make a Pop Corn Bar with melted Enjoy Life Mini Chocolate Chips, sprinkles, cinnamon, nutritional yeast, crushed candies or other favorite snacks.

6. Don’t Forget Dessert

You need dessert on Valentine’s Day. I think dessert is waaaay more important than the other food. If you are going for the classic V Day dessert you need to make Chocolate Covered Strawberries. Just melt Enjoy Life Mini Chocolate Chips then dip your strawberries in the melted chocolate, refrigerate them until you are ready for dessert. You could also make Brownies or a Fresh Fruit Parfait.

Plant-Based Party Planning Guide

Are you hosting (or attending) a Christmas or New Year’s Eve Party? We’ve already been to one Christmas Party this year and will likely attend others. For years we hosted a large Christmas party and would usually have around 70 people squeezed into our house for a few hours. It was a lot of work and a lot of fun. After our babies were born we took a break from hosting such large events. I’m hoping we can return to them in a few years when our kids need a little less supervision.

If you are attending a party you have it pretty easy, you can just bring a dish to share and be done. If you are like me, you want your dish to be a show stopper and as allergy-friendly as possible. The list below will give you some ideas.

If you are hosting a party I’ve found an Open-House Style Dessert and Appetizer/Hors d’oeuvre Party to be the easiest and most fun to host. If you are hosting a Dinner I highly recommend you check out my Thanksgiving Dinner Meal Plan! It work’s great for Christmas as well and you can still add a few of the ideas below.

The great thing about a Dessert and Appetizer/Hors d’oeuvre Party is that you can ask everyone to bring a treat to share to cut down on work. We never specified what people should bring and ended up with a great assortment every year.

My guests were welcome, but not required, to bring a treat. As I made my preparations I would plan enough treats to feed everyone, even if no one brought a dish. I would only plan foods that could be left room temperature for a few hours, unless you are using a crock-pot. I also liked to have a good mix of sweet and savory foods to choose from.

Sweet Treats

  • Gluten-Free Brownies
  • Fresh Fruit Parfaits (make them in small “shot glass sized” cups and keep extras refrigerated until needed)
  • Cupcakes with crushed candy canes on top
  • Chocolate Mousse with fresh fruit (I recommend you nest the chocolate mousse bowl in a bigger bowl filled with ice)
  • Cookies, lots and lots of cookies! I would make dozens of sugar cookies, chocolate chips cookies, no-bakes, and peanut butter.
  • Chocolate Covered Pretzels. Glutino makes great GF pretzels, just pick a great dairy-free chocolate to melt.
  • Peppermint Black Bean Brownies
  • Gluten-Free Chocolate Cake or Cupcakes

Savory Snacks

  • A Nacho Bar featuring Chips, Salsa, Guacamole, Faux Cheeze Sauce (in crock-pot), and maybe Quinoa-Lentil Taco Meat
  • Hummus and Veggies
  • Savory CHICKpea Salad with Crackers or on mini-sandwiches, you can add spicy pepper and tomatoes for a spicier dish
  • Spring Rolls
  • Tortilla Rollups, use vegan cream cheese and finely chopped veggies
  • Baked Potato Wedges with assorted dipping sauce
  • Stuffed Mushrooms or Stuffed Shells
  • Popcorn
  • Trail Mix

Many people will be holding a plate with one hand and eating with the other. I try to stick to foods that can be eaten without utensils when possible.

Drinks

  • Water and Fruit Infused Water
  • Sparkling Water with Lime Wedges, Cucumbers or other fruit
  • Coffee (chose decaf if you are making a lot at once and choose flavored creamers) Check out Sarah’s ebook The Natural Barista for some great ideas.
  • Punch or lemonade
  • Hot Chocolate or Hot Apple Cider with fun additions like candy canes, cinnamon sticks, etc.

I recommend setting up a Drink Station so most of the spills are confined to one area, hopefully near the sink. I buy small cups because many will be filled to the top then forgotten completely. Placing a few makers near the Drink Station will help. I also strategically place a few dish towels and a roll of paper towels to handle spills. Hot Chocolate or Apple Cider can be kept warm in a crock pot but you will need cups appropriate for hot beverages.

Comfort Tips

  • Turn your thermostat a few degrees cooler than normal, the extra body heat will warm things up.
  • Set up name tags near the front door and ask everyone to wear one. This will cut down on awkward moments when you forget your neighbors name.
  • Have your spouse, older child or close friend check the restroom periodically for spills, low supplies or anything else that needs attention.
  • Let your guest know if children are welcome at the party. If so, try to have a special seating/eating area for them. Many will need to sit down to eat. Put away any fragile items that may be intriguing to little fingers.
  • If your dining table is used as a serving table remove the chairs and move them to another area. We forgot one year and lots of people sat (and sat their kids) at the serving table and no one else could get to the food, and the kids helped themselves. You could also use the table for dining and chose another area for serving.
  • Move furniture around to create plenty of sitting and standing room.
  • Turn OFF the TV if it is in the main area. If you play music make sure it is low enough that no one has to compete with it to talk.
  • Have food refills available to grab easily. For example, I would have cookies on a plate wrapped up but ready to go and one veggie tray assembled with veggie refills in individual containers.
  • Have extra tongs or serving utensils handy.
  • If serving allergy-friendly treats label them and consider placing them away from foods that could cross-contaminate them.
